Garlic Rosemary Mashed Potatoes are creamy and cheesy flavored with garlic, fresh herbs, parmesan cheese and sour cream.
Tomorrow’s the day. You’ve got about 24 hours to get it all done, but all you want to do is chat with me. It’s cool. All I want to do is chat with you, too! Besides, I did the whole bird-and-thanking-thing last week.
If you remember, just a few days ago I told you that tomorrow, Thanksgiving Day, is the start of the Nativity Fast for us in the Orthodox faith, thus while you’re chomping down on those turkey legs, I’ll be over here inhaling peanuts and raw vegetables. And water.
I can probably have a helping or two of these amazing Garlic Rosemary Mashed Potatoes, except I’ll have to eliminate the butter, the sour cream and the parmesan cheese… Considering all of that, looks like I’ll be having boiled potatoes. HA!
I really hope that most of you are already prepared for tomorrow, and that your menus are done, but I thought it would be totally cool to put together a menu of those things that my family and I had on our early Thanksgiving table last week. I also thought that this menu might help you, or even inspire you while preparing for your big Thanksgiving dinner.
But, before I go on, I just want to tell you that I am very THANKFUL for each and every one of you. I am thankful that you come here day in and day out to read my ramblings, try my recipes, give me feedback and be my friend. Thank you for all your support – there are no words to express my gratitude. Thank you!
Now onto the grub!
OUR THANKSGIVING BREAKFAST:
PUMPKIN PIE CINNAMON ROLLS – Breakfast of CHAMPS!
I also made a quart of this Spicy Hot Chocolate Mocha
LUNCH/DINNER {Scheduled for 3:00 pm. Didn’t happen until somewhere around 4:30… we are always late to our own parties}
Rosemary Lemon Roasted Turkey made with infused rosemary-lemon olive oil, garlic and stuffing.
Cranberry & Sweet Potato Stuffing
Brussels Sprouts Salad with Apples and Candied Walnuts
Somewhere in between all of this we were also sipping on my favorite Spiked Apple Cider
and a few glasses of Sangria!
For DESSERT I served this Cranberry Upside Down Tart and a Chocolate Layer Cake that I can’t wait to share with you in the coming days!

Garlic Rosemary Mashed Potatoes
Ingredients
- 6 large potatoes, washed and cut in 4 wedges
- water
- 1 stick butter
- 6 garlic cloves, minced
- 3 sprigs rosemary
- 1/2 cup shredded parmesan cheese
- 1 cup sour cream
- salt and fresh pepper, to taste
Instructions
- Add cut potatoes into a large pot and cover with cold water.
- Cook over medium heat and simmer potatoes for 15 to 20 minutes or until fork tender.
- Strain potatoes.
- In a deep pot (you can use the one you used for the potatoes) add butter, garlic and rosemary sprigs.
- Cook over medium-low heat until butter starts to brown.
- Remove from heat.
- Remove rosemary sprigs and discard.
- Add potatoes to the prepared butter.
- Season with salt and pepper. Depending on the saltiness of the parmesan cheese you are using, you may want to wait to salt the potatoes until the end.
- Add parmesan cheese and sour cream; mash using a potato masher until smooth and creamy.
- Taste for salt and pepper and adjust accordingly.
- If you like the potatoes creamier, add more sour cream.
- Serve.

No matter when you have Thanksgiving, it’s a delicious meal. One year I made the spread 3 times in 4 months (on Thanksgiving, on Christmas day for my brother and his family visiting from Denmark, and a couple months later when my spouse returned from a deployment).
I am smitten with the sweet potato cranberry stuffing photo–it looks so lovely!
