Juicy Strawberry Pomegranate Mojitos

Mojitos are a classic rum cocktail recipe with fresh mint, lime juice, and soda. From cucumber mojitos to festive coconut mojitos, it’s by far my favorite summer cocktail. While Hubby is on grilling duty, I’m usually on refreshment duty, and there’s nothing I love more than an easy mixed drink. 

This strawberry mojito with pomegranate juice is my latest rendition. I muddle fresh strawberries along with the mint, and mix in a splash of tart pomegranate juice. It’s a bit sweeter and juicier than your typical mojito, and just as refreshing for summer.

Strawberry Mojito Ingredients

These are the ingredients needed to make this easy strawberry pomegranate mojito. Refer to the recipe card for the full recipe with exact amounts.

  • Strawberries – Wash and hull fresh strawberries using a specialty strawberry huller or a sharp paring knife. If you’re using frozen strawberries, thaw them before you make your cocktails. You can also make a variation of this cocktail using homemade strawberry sauce or strawberry juice instead of fresh strawberries.
  • Fresh Mint – Fresh mint leaves are essential for mojitos! Please don’t use dried mint for your cocktail.
  • Lime – I highly recommend freshly squeezed lime juice. Bottled just doesn’t have the same flavor.
  • Rum – The liquor of choice in a classic mojito. I prefer to use white rum, but dark or spiced rum will also work in this recipe. Darker rum adds a slightly different flavor profile.
  • Pomegranate Juice – If you can’t find pomegranate juice where you live, cranberry juice is a good substitute.
  • Club Soda – You could also make your drink a bit sweeter with lemon or lime soda, like 7Up.

What to Serve With Your Mojitos

Mojitos instantly make me think of a tropical vacation, so I love to serve our strawberry mojitos with dishes that share similar island-somewhere-warm energy. This pineapple cucumber salad and easy appetizers like grilled shrimp are just some of my favorites.

Make a Non-Alcoholic Version

For a mojito mocktail, I’d simply leave out the rum or replace it with additional club soda. My sparkling strawberry limeade with mint is a great non-alcoholic alternative to this recipe. You might also love this strawberry acai refresher (a homemade Starbucks copycat!).

Strawberry Pomegranate Mojitos

This strawberry pomegranate mojito is a refreshing, fruity rum cocktail recipe with muddled strawberries, fresh mint, and pomegranate juice. A fun, easy twist on a homemade mojito!

Servings: 2 serves

Ingredients 

  • 12 strawberries, rinsed and hulled
  • ¼ cup fresh mint leaves
  • 1 lime, juiced, divided
  • 3 ounces white rum, divided
  • ½ cup pomegranate juice, divided
  • Club Soda, or Lime Soda
  • Additional strawberries and mint leaves, for garnish

Instructions 

  • Muddle the strawberries. Divide up the strawberries and mint leaves between two tall drinking glasses. Add lime juice to the glasses and muddle the mixture until the strawberries are well mashed and juicy.
  • Assemble. Fill glasses to the top with ice cubes. Add the rum and pomegranate juice. You can add more rum if you like, to taste. Slowly pour in club soda or lime soda; fill to the rim, or as desired.
  • Enjoy! Garnish with strawberries and mint leaves, and serve.

How to Make Strawberry Pomegranate Mojitos

  1. Divide the ingredients. First, divvy up the strawberries and mint leaves between two glasses. Traditionally, these would be highball glasses or Collins glasses, but any tall drinking glass does the trick.
  2. Muddle. Next, add lime juice. Use a muddler to muddle the strawberries (i.e., mash them) with the mint and lime until they’re mashed and juicy. If you’d like, you can add a bit of sugar before you start to muddle. I don’t only because I think the strawberries are sweet enough, but if you like a sweeter drink, go for it. Pro tip: No muddler? Mash the mint and berries with a fork instead!
  3. Finish the cocktails. Fill up both glasses with ice. Stir in the rum and pomegranate juice, and then top up the glasses with club soda. Garnish your mojitos with fresh strawberries (or Champagne strawberries) and mint leaves, and enjoy.

    The strawberry huller is interesting! I have old fashion strawberry huller that is just like a wide tweezers. But this one is even cooler! I’ll look into this. I use a knife to cut out like this. Considering how much we eat strawberries this sounds like a handy tool. 🙂 Love your mojito!!! Pretty and refreshing drink!
