Ingredients 

  • 2 pounds large raw shrimp, peeled, deveined (tails on or off)
  • salt and fresh ground black pepper, to taste
  • cup melted butter, divided
  • ¼ cup lemon juice
  • 4 cloves garlic, minced
  • 2 tablespoons minced fresh parsley
  • cup pork panko crumbs, or regular panko crumbs
  • ¼ cup grated parmesan cheese
  • ½ teaspoon sweet or smoked paprika, or more, to taste
  • fresh chopped parsley, for garnish
  • lemon wedges, to serve

Instructions 

  • Prep. Preheat oven to 425˚F. Arrange the shrimp in a baking dish and season with salt and pepper.
  • Make the butter sauce. Melt the butter in a bowl, then whisk the lemon juice, minced garlic, and minced parsley with the melted butter; pour half of the garlic butter mixture over the shrimp and stir the shrimp around until well combined. Arrange the shrimp in a single layer inside the baking dish. Set aside.
  • Make the crumb topping. In a small mixing bowl, combine the remaining melted butter mixture, the pork panko crumbs, parmesan cheese, and paprika; mix well to combine. Sprinkle this crumb mixture evenly over the shrimp.
  • Bake. Place the shrimp in the oven and bake for 12 minutes, or until bubbly. Set the oven to BROIL and cook for another minute or two, or until the top is golden and crispy.
  • Finish and serve. Remove the baked shrimp from the oven. Garnish with chopped parsley and serve with lemon wedges.

  • Butter: To get 1/3 cup of melted butter, you’ll need about 5 to 6 tablespoons, give or take, of solid butter.

    This sounds delicious but at the moment I only have a bag of frozen cooked shrimp so I’m going to give it a try with only baking (or microwaving 1 minute and then broiling) just to heat the shrimp and crisp up the bread crumbs.

        Frozen is okay to use as long as they are raw. Keep in mind, if using frozen and raw, make sure to use shrimp that have already been deveined and shells removed. If not, you’ll need to thaw the shrimp and clean them up before using.

    Can we replace the panko crumbs with almond flour if i don’t have access to the panko crumbs?

      You could, it will definitely work, but the panko crumbs help with the crunchy texture – using almond flour won’t give you that same crunch, and the taste will not be as intended. Can you make your own breadcrumbs and toast them in the oven for a few minutes? That will also work.

      The remaining melted butter is used to combine with the panko crumbs.
      Look under Step #4 in the recipe: In a small bowl combine the remaining melted butter, pork panko crumbs, parmesan cheese, and paprika; mix well.
