These Bacon Wrapped Chicken Skewers bring together two of my favorite food combinations: bacon and juicy chicken! Deliciously seasoned and oven grilled to a perfection, this recipe is very simple, but incredibly flavorful.

Oven Grilled Bacon Wrapped Chicken Skewers

HOW DO YOU COOK BACON WRAPPED CHICKEN SKEWERS?

This recipe takes very little time to prepare with just a few ingredients, including: boneless skinless chicken breasts, seasonings, and bacon.

  • Preheat oven to 350F.
  • Line a rimmed baking sheet with foil and position a wire rack on top of the baking sheet. Spray wire rack with cooking spray and set aside.
  • Next, cut up the chicken breasts into about 1-1/2 inch pieces.
  • Drizzle chicken with a bit of olive oil.
  • Season chicken pieces with your favorite seasonings, or you can use my blend; I like to use salt, pepper, sweet paprika, cayenne, garlic powder, onion powder, dried thyme, and dried basil.
  • Take bacon slices and cut them in half.
  • Wrap each bacon half around a piece of chicken, then thread onto skewers. About 5 to 6 pieces per skewer. You want to pack them close together on the skewer so that the bacon slices stay intact.

Bacon Wrapped Chicken Skewers

  • Arrange skewers on top of previously prepared baking rack.
  • Cook for 25 to 30 minutes, or until chicken is cooked through.

HOW TO FREEZE BACON WRAPPED CHICKEN

  • To freeze, place each piece of bacon wrapped chicken on a lined cookie sheet and freeze overnight. Remove from freezer and place in freezer bags. Freeze for up to 3 months.
  • Defrost overnight in the fridge.
  • Remove from fridge and let stand 15 minutes on the counter.
  • Thread onto skewers and continue as directed.

Ingredients 

  • 1 pound boneless skinless chicken breasts, , cut up into 1 inch to 1-1/2 inch pieces
  • 1/2 tablespoon olive oil
  • salt and fresh ground pepper, , to taste
  • 1/4 teaspoon smoked or sweet paprika
  • 1/8 teaspoon cayenne pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 10 to 12 bacon slices,, cut in half, crosswise
  • 5 to 6 grilling skewers, (I use metal skewers for the oven, but if you use wooden skewers, please soak them in water for 15 minutes prior to adding the chicken to the skewers.)

Instructions 

  • Preheat oven to 350F.

  • Season with salt, pepper, paprika, cayenne pepper, garlic powder, onion powder, dried thyme, and dried basil; mix around until well combined.
  • Wrap each piece of bacon around each chicken piece, and thread 5 to 6 pieces onto each skewer. You want to pack them close together on the skewer so that the bacon slices stay intact.
  • Arrange skewers on top of previously prepared baking rack.
  • Cook for 25 to 30 minutes, or until chicken is cooked through and bacon is crispy.
  • Remove from oven and let stand 5 minutes.
  • Serve.

GRILL METHOD:
  • Prepare the chicken skewers.
  • Heat up grill to medium-high heat.
  • Oil the grates really well to prevent bacon from sticking. 
  • Arrange chicken skewers on the grill and cook for 4 minutes. 
  • Turn over, and, optionally, brush with your favorite barbecue sauce to keep it moist; continue to cook for 4 minutes.
  • Turn over again, brush with barbecue sauce, and continue to cook for 4 more minutes, or until done. Chicken is done cooking when internal temperature reaches 165˚F.

    I REALLY thought something this simple couldnโ€™t be awfulโ€ฆunfortunately I was wrong! Baked it for 25 minutes then another 5. Bacon didnโ€™t even really cook, at least not edible. So I broiled both sides for 5 minutes and that didnโ€™t help the bacon either. Not sure where the picture came from but maybe that person needs to make it for me! I told a picture but there isnโ€™t an option to submit

    Twice I have made this and the bacon did not crisp either time. Suggestions?

      Hi!
      You can put them under the broiler for the last 2 to 3 minutes of cooking, and that should crisp up the bacon.

    Please try to not assume everyone has two ovens by recommending recipes that require two different cooking temperatures. The cauliflower recipe you listed sounded great, but then requires the oven temp to be 450.

    These are awesome! The taste is so satisfying! I cooked them on the middle rack of my oven and didnโ€™t get the crispy look to the bacon, so I turned on the broiler for a bit on both sides. NOTE: if you end up with the same issue. Place skewerโ€™s on another sheet pan and AVOID the smoke fest!!! Lol!!!

    My bacon never got crisp, I turned the oven on 400 and tried getting it crisp, then I finally put it under the broiler at 500 degrees
