I am sure you’ve had avocado toast before—it’s everywhere. But I love making it at home, and this is the best version yet! How do I know?! Because my taste testers, also known as my super picky kids, love it! If you’re wondering how to make avocado toast, this recipe is easy and will give you restaurant-quality results in the comfort of your kitchen. And you won’t pay 16$ for it.

Creamy avocado is spread over crusty sourdough bread and seasoned simply with salt and pepper. The avocado toast is topped with a sunny-side-up egg cooked in butter, which is totally optional but totally recommended by me! As you cut into the perfectly runny yolk of the egg, it breaks over the toast to create a velvety sauce and one of the best breakfast bites you’ve ever had!

To add, this avo toast takes less than 10 minutes to make and is loaded with flavor! Enjoy it for breakfast with a cup of cinnamon dolce latte and some fruit, or be like me and have it for lunch with a crisp green Mediterranean salad.

What You’ll Need

For the avocado toast

  • Quality sourdough bread – Sourdough is hands down my favorite, but any sturdy, crusty bread will do.
  • Ripe avocado – A well-ripened avocado is much easier to spread and it’s creamier.
  • Salt & Black Pepper – A simple seasoning to enhance the flavors.

For the eggs

  • Butter – You could use avocado oil instead.
  • Eggs – I find that room-temperature eggs are much easier to work with. If time permits, take the eggs out of the fridge 10-15 minutes before you want to cook them.
  • Salt & Pepper – Use enough to taste.

How To Make Avocado Toast

I love how simple it is to make this delicious breakfast toast. Here’s a quick overview of how to do it.

  1. Toast the sourdough. Pop the bread in the toaster and toast to your liking.
  2. Make the eggs. Melt the butter over medium-low heat and gently crack the eggs into the pan. Season with salt and pepper, cover the skillet with a tightly fitting lid, and cook for 2-2 ½ minutes.
  3. Add the avocado. Gently mash 1/2 of the avocado into each piece of toast. Season with salt and pepper.
  4. Put it all together. Remove the lid from the skillet and slide an egg onto each piece of avocado toast.

Recipe Tips

  • Bread choices. Opt for a sturdy, hearty bread like whole grain, sourdough, or multigrain. The thickness and texture can greatly affect the overall taste and feel.
  • Ripe avocados. A perfectly ripe avocado is key. It should give slightly when pressed but not feel mushy.
  • Mashing technique. Some prefer a smooth, guacamole-like texture, while others like chunky avocado bits. Experiment to find your favorite style.
  • Season generously. Don’t skimp on the salt and pepper. A light sprinkle will enhance the natural flavors of the avocado.
  • Skillet choices. The most foolproof way to go here is a non-stick skillet. It will help prevent the delicate egg whites from sticking to the pan. You can, however, use stainless steel or cast iron instead. Just make sure you are using enough butter to prevent the eggs from sticking.
  • Preheat the pan. Allow the pan to heat up over medium-low heat before adding any butter. This ensures even cooking and prevents the egg from sticking.
  • Cooking the egg. Crack the egg gently and as close to the pan’s surface as possible. This will help prevent the yolk from breaking.
  • Cover the pan. Covering the pan with a lid helps steam the egg gently, ensuring that both the white and the yolk cook evenly without the need to flip the eggs.

Avocado Toast Variation Ideas

  • Play with seasonings. Change up the flavor by adding a dash of red pepper flakes, cumin, paprika, or seaweed flakes.
  • Citrus. Squeeze a hint of lemon or lime juice over the avocado for a brighter flavor and to help prevent it from browning.
  • Add more texture. Introduce some crunch by sprinkling toasted nuts, seeds (I love toasted sesame seeds here), or crumbled bacon over the top of the avocado toast.
  • Cheese, please. Get a little extra protein in and some fun new flavors with a smattering of grated Parmesan, feta, or goat cheese.
  • Make it vegan. If you’re looking to avoid animal products, consider swapping the butter out for avocado oil and the egg for pan-fried tofu slices or a vegan egg substitute.

Ingredients 

For the avocado toast

  • 2 slices of quality sourdough bread
  • 1 large ripe avocado
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

For the eggs

  • 2 tablespoons butter
  • 2 large eggs
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions 

  • Toast the sourdough. Pop the bread in the toaster and toast to your liking.
  • Make the eggs. While the bread is toasting, melt the butter over medium-low heat in a medium, heavy-bottomed skillet. Crack the eggs into the pan. Give them plenty of space from one another, and be gentle. You don’t want to break the yolk. Season the eggs with salt and pepper, cover the skillet with a tightly fitting lid, and cook for 2 to 2 ½ minutes.
  • Add the avocado. While the eggs are cooking, scoop half of the avocado onto one piece of toast and half onto the other. With a fork, gently mash the avocado into the toast. Season with salt and pepper.
  • Put it all together. Remove the lid from the skillet and slide one egg onto one piece of avocado toast and the other egg onto the other piece of avocado toast. Serve.
