Sheet pan tacos are a fun way to make crispy baked tacos for a crowd! This easy sheet pan dinner layers soft flour tortillas with seasoned ground beef filling, melty cheese, and fresh homemade pico de gallo.

The Easiest Ever Sheet Pan Tacos

Sheet pan tacos have to be the ultimate taco night recipe. All those layers of toasty, golden tortillas stuffed with juicy taco meat, shredded cheese, and pico de gallo… I’m already thinking that these would make an excellent recipe for next year’s Cinco de Mayo party, or maybe I’ll just make them for family dinner again next week.

These single-pan oven-baked tacos couldn’t be easier to prepare. It’s better than assembling individual tacos, that’s for sure. I season ground beef with homemade taco seasoning, but you could always use a packet from your favorite brand. It’s even quicker if you use leftover taco meat for the filling!

Why You’ll Make Sheet Pan Tacos Again and Again 

  • Beefy and cheesy. These ground beef tacos are a bit like one big, delicious, cheesy quesadilla. Slice and serve with extra salsa and your favorite taco toppings.
  • Crowd-friendly. If you have a game day party or Mexican-inspired dinner coming up, these sliceable sheet pan tacos are enough to feed a small army, and you assemble them all in one pan.
  • Customize them as you’d like. I make sheet pan beef tacos, but you can absolutely make the filling with shredded chicken or even taco leftovers, like salsa verde chicken or pork carnitas.

I try to put a fresh twist on tacos any chance I get, whether that’s taco bowls, taco pasta, or a walking taco casserole. And when it comes to sheet pan dinners, there are so many ways to change it up. Try sheet pan steak fajitas or this flavor-packed Hawaiian chicken next!

Ingredients Needed

Here’s what you’ll need to make this sheet pan taco recipe this week. Scroll to the recipe card for the printable recipe details with measurements.

For the Beef Filling

  • Onion – Chopped white or yellow onion creates an aromatic flavor base for the beef filling.
  • Ground Beef – I like to use lean ground beef so the tacos don’t come out overly greasy. You can also make the filling with ground chicken, turkey, or pork.
  • Spices – Paprika, cumin, garlic and onion powder, and chipotle powder add plenty of warm, Tex-Mex flavor to the ground beef filling. You can swap the individual spices with a homemade or store-bought taco seasoning blend.
  • Tomato Paste – You could also use a spoonful of tomato purée or tomato sauce.
  • Lime Juice – Freshly squeezed, if you can.
  • Sweet Corn – This is optional, but canned sweet corn kernels add a nice pop of color and texture to the beef mixture.

For Assembling the Tacos

  • Flour Tortillas – I use 8-inch tortillas. You can also make this recipe with corn tortillas if that’s what you have.
  • Shredded Cheese – Colby Jack and Pepper Jack cheese, Monterey Jack, or a Mexican cheese blend. For best results, grate the cheese fresh from the block instead of buying pre-packaged shredded cheese. Another option is to use queso blanco or nacho cheese.
  • Pico de Gallo – I include my super-easy homemade pico de gallo, a type of fresh Mexican salsa. All you need is fresh tomatoes, red onion, and a seeded jalapeño. Chop everything finely and toss with fresh lime juice, salt, and chopped cilantro. It’s way better than store-bought!

Variations to Try

  • Different salsa. Instead of pico de gallo, fill and serve your sheet pan tacos with restaurant-style salsa instead.
  • Repurpose taco night leftovers. Swap the seasoned ground beef with leftover cooked birria, picadillo, or pulled chicken.
  • Add beans. For added texture, rinse and drain canned black beans or pinto beans and stir them into the taco meat.
  • Vegetarian. Try filling your tacos with vegetarian sofritas or substitute ground beef with your favorite meatless mince.
  • Buffalo chicken. I can’t wait to try a variation of this recipe inspired by my Buffalo chicken tacos with shredded Buffalo chicken and crunchy broccoli slaw.
  • Crunch wrap-style. After you’ve added the beef and cheese to your bottom layer of flour tortillas, add a layer of crispy tostada shells on top of the cheese. Spread the tostadas with sour cream and add the pico de gallo, then your top layer of flour tortillas, and bake. It tastes just like a Taco Bell crunch wrap!

What to Serve With Sheet Pan Tacos

These make a wonderful game day recipe or party food, and I often serve my sheet pan tacos with tortilla chips for scooping up the extra pico de gallo. I also like this quinoa and black bean salad or a refreshing pineapple cucumber salad on the side. Try more ideas:

Sheet Pan Tacos

Crispy baked sheet pan tacos are an easy way to make tacos for a crowd with soft flour tortillas, seasoned ground beef, melty cheese, and homemade pico de gallo.

Ingredients 

For the beef filling:

  • 2 tablespoons olive oil, + 2 tablespoons more for the tacos
  • 2 cups diced yellow onion
  • 3 pounds lean ground beef
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 teaspoon chipotle powder
  • 1 tablespoon tomato paste
  • 2 tablespoons lime juice
  • salt and freshly ground black pepper, to taste
  • 1 cup corn, optional (but adds nice texture)

For the tacos:

  • 16 8-inch flour tortillas
  • 3 cups shredded Colby Jack cheese
  • 1 cup shredded Pepper Jack
  • cups pico de gallo*

Homemade pico de gallo:

  • 3 cups diced fresh tomatoes
  • 1 cup finely diced red onion
  • cup fresh lime juice
  • 3 tablespoons finely diced jalapeño, seeded
  • 3 tablespoons chopped fresh cilantro
  • salt, to taste

For serving – optional:

  • ¾ cup pickled red onions
  • sour cream, optional
  • lime wedges

Instructions 

  • Make pico de gallo. Combine the tomatoes, red onion, lime juice, jalapeño, cilantro, and salt to taste in a bowl. Stir well and refrigerate until ready to use.
  • Prepare the beef filling. Heat olive oil in a large skillet over medium-high heat. Add the onion and cook for 4–5 minutes, until softened. Add the ground beef and cook until browned, breaking it apart as it cooks. Stir in smoked paprika, cumin, garlic powder, onion powder, oregano, chipotle powder, tomato paste, lime juice, salt, and black pepper to taste. Add corn if you are using it at this point. Cook for 2–3 more minutes, stirring. Remove from the heat and allow the mixture to cool slightly.
  • Get ready to bake. Preheat the oven to 350ºF. Brush a 9×13-inch baking sheet with 1 tablespoon olive oil.
  • Assemble the tacos. Lay 10 flour tortillas on the prepared baking sheet, making sure there are 3 inches of overhanging sides. Also, it is important that the tortillas at the bottom overlap and there are no gaps. Spoon the beef over the tortillas, then top the beef with cheese. Add pico de gallo over the cheese. Place the remaining tortillas over the beef filling, and fold over them the overhanging tortillas. Brush the tortillas on top with the remaining olive oil.
  • Press the tacos. Place another baking sheet over the tortillas. The second baking sheet should be large enough that the tacos are pressed evenly. I used a ceramic baking sheet. If you are using a lighter one, then add a cast iron skillet to it to gain some weight.
  • Bake. Bake the tacos for 30 minutes. Remove the second baking sheet and bake for another 25 minutes or until the top is golden brown.
  • Serve. Cool the tacos briefly before serving with sour cream, pickled onions, and/or lime wedges.

Notes

  • You can add some black beans for more texture.
  • Instead of flour tortillas, you can use corn tortillas.
  • Make sure to weigh down the tacos with the second baking sheet.

How to Make Sheet Pan Tacos

Make sure to weigh down these sheet pan tacos with a second baking sheet when they go into the oven. It prevents the tacos from popping open and helps the tortillas crisp on all sides. 

  • Prepare the pico de gallo. If you’re making your pico de gallo from scratch, stir the ingredients together in a bowl. Place the pico in the fridge until it’s time to use it.
  • Make the beef filling. Meanwhile, sauté onion and ground beef in a skillet, breaking up the beef while it cooks. Once browned, stir in the taco spices, tomato paste, lime juice, salt, and pepper. Add corn kernels, if using.
  • Lay out the tortillas. Brush a 9×13-inch baking sheet with oil. Arrange the first layer of flour tortillas on the pan, ensuring there aren’t any gaps. Leave about 3 inches overhanging each side of the pan.
  • Assemble the tacos. Next, spread the ground taco meat in an even layer over the tortillas. Sprinkle the shredded cheese on top, then spoon the pico de gallo over the cheese.

  • Seal the tortillas. Finally, place the remaining flour tortillas over the filling. Fold over the overhanging tortilla edges to seal the tacos, and brush the tops with olive oil.
  • Press them. To hold the tacos closed, place a second heavier sheet pan on top of the first. Choose one that’s large enough to evenly cover the tacos (I use a ceramic pan). If you’re using a lighter pan, try weighing it down with an oven-proof pan, like a cast-iron skillet.
  • Bake. These sheet pan tacos go into the oven at 350ºF for 30 minutes. At this point, remove the second baking sheet and bake for another 25 minutes to crisp up the top. They’re done when the tacos are a nice golden brown. Afterward, cool them for a bit before serving. The filling will be hot!

Storing and Reheating Leftovers

  • Refrigerate. Sheet pan tacos are best served right away, as the tortillas soften the longer they sit. However, if you have leftovers, wait until they cool and then store the tacos airtight. They’ll keep for up to 2 days in the fridge.
  • Reheat. The best way to reheat these is on a baking sheet in a 350ºF oven so the tortillas can crisp up again. The microwave makes them a bit soggy.
