Okay, obviously, today, there are no apples in sight, but we do have brussels sprouts and avocado. Aaaaand PISTACHIOS.

Looks like I also have a *thing* for healthy food. I loooove it! But my *thing* for cakes is a wee-bit bigger…
You know how that one time your mother told you to eat your greens? I think I finally made my mother happy – I ate ALL my greens. Avocados, pistachios, brussels sprouts – all green! all in my belly!
That’s why we are just going to let this happen… let this salad be.
If we’re going to eat a salad, though, I insist that we pretty it up with some pistachios. They are healthy – boom! – they are delicious – bang! boom! – and nutritious! – boom! bang! boom!
Celebrity trainer, Valerie Waters, states that pistachios are also a good source of fiber, providing 12% of the daily value per 30 gram serving. And? 30 pistachios is only about 100 calories! Score!
I have a secret to eating my pistachios. I trick myself into buying the shelled pistachios so to make it harder for me to eat the entire bag – I’m too lazy to crack them all open. Hey! That’s the definition to ‘in moderation’.
Did you know? More nuts = more benefits?! According to a Harvard University study, benefits of snacking on nuts go up as the number of servings goes up, too. That means – eat A LOT more nuts! This salad, though?? Oh my goodness! It’s like mother-healthy came knocking on my door and I welcomed her in. Then we made this salad together. Then we ate and ate and ate… and we were both satisfied and happy. And healthy.
- 3 tablespoons olive oil
- 1- pound brussels sprouts , trimmed
- 1 large red onion , thinly sliced
- salt and fresh ground pepper , to taste
- 1 teaspoon sugar
- 1/2 cup pistachios , cleaned, peeled, and coarsely chopped
- 1 lime , juiced
- 1 avocado , peeled and cubed
- Heat olive oil in a nonstick pan and over medium heat.
- Cut brussels sprouts in half and thinly slice; they will look shredded.
- Add brussels sprouts and onion to the pan.
- Season with salt and pepper; saute for 3 to 4 minutes, or until tender.
- Stir in sugar, pistachios, and lime juice.
- Continue to cook for 2 more minutes.
- Remove from heat.
- Gently mix in avocado chunks.
- Serve immediately.
