The first time I made this roasted carrots recipe, I knew it was going into the regular side-dish rotation. The carrots have enough flavor to make a weeknight chicken dinner more interesting, but they’re just as at home next to honey mustard glazed ham on a holiday table. And since everything roasts on one sheet pan, they’re wonderfully low-maintenance when the rest of dinner needs your attention.
If you love the sweet, caramelized flavor of my maple roasted carrots, this recipe takes carrots in a completely different direction. Instead of maple syrup, we’re leaning into savory flavors with garlic, Parmesan, and Italian seasoning. Both recipes start with the same simple idea: carrots become a whole lot more interesting when you give them something good to roast in.

What You’ll Need
Roasted to a sweet and tender deliciousness, these garlic parmesan carrots are an easy-to-make side dish and they take only 5 minutes to prep. Here’s what you’ll need to make this recipe:
- Carrots: The carrots should be washed, scrubbed, and diagonally cut into about 3-inch pieces
- Butter: The melted butter adds flavor and texture, amplifying the carrots’ natural taste.
- Garlic: Garlic adds a big bold taste to the butter sauce, adding a savory twist that pairs just right with the sweet carrots.
- Italian Seasoning: This mix provides a fragrant flavor that can transform a simple dish into something that tastes gourmet, giving it a warm, earthy, and slightly sweet taste.
- Salt & Black Pepper
- Grated Parmesan Cheese: Grated Parmesan cheese adds a rich, sharp, and salty flavor to the carrots.

The Key to Perfectly Roasted Carrots
Great roasted carrots should be tender all the way through with browned, caramelized edges, not pale and steamed or scorched on the outside while they’re still crunchy in the middle. A few details make all the difference:
- Cut them into similar-sized pieces. Carrots can vary wildly in thickness, so aim for pieces that are roughly the same size rather than simply cutting every carrot into equal lengths. This helps everything finish roasting at the same time.
- Give them room on the pan. Spread the carrots in a single layer with a little breathing room between them. Crowd the pan and the moisture released as they cook gets trapped, which means softer, steamed carrots instead of those beautifully browned edges.
- Don’t be shy with the heat. I roast these at 425°F, which is hot enough to encourage browning while giving the centers time to become tender. That caramelization is where carrots really start to shine, since roasting concentrates their natural sweetness.
- Coat them well before roasting. Tossing the carrots thoroughly with the seasoned garlic butter means you’re not relying on a drizzle over the top to do all the work. You want that butter, garlic, and seasoning touching as much of each carrot as possible.
- Toss them halfway through. Give the carrots a turn around the 10 to 12-minute mark so more than one side gets a chance to make contact with the hot pan. Those browned spots are exactly what we’re after.
- Use tenderness, not the clock, as your final test. Twenty-five minutes is a good guide, but carrots aren’t manufactured to identical dimensions. Pierce the thickest piece with a fork or the tip of a paring knife. It should slide in easily without the carrot falling apart.

Spread carrots on a rimmed baking sheet and cook in a 425˚F oven for 20 to 25 minutes or until tender. Mix carrots around halfway through cooking.
The short answer is NO. So long as they are washed and scrubbed, you do not need to peel the carrots before cooking. It’s a personal preference; sometimes I do, other times I don’t.
Serving Suggestions
- As a Side Dish: Serve carrots alongside roasted or grilled meats such as chicken thighs, roast beef, or pork loin.
- With Seafood: The buttery garlic and Parmesan flavor complements this grilled swordfish, or serve them up with my amazing branzino recipe.
- With Other Roasted Vegetables: Combine the roasted carrots with my roasted turnips recipe or other roasted vegetables like oven roasted Brussels sprouts or sweet potato wedges for a mixed vegetable side.
- Over Pasta or Risotto: Cut the carrots into smaller pieces and serve them over olive pesto pasta or lemon parmesan risotto for a vegetarian main course option.

Storing & Reheating
- Refrigerate: Let the roasted carrots cool, then transfer them to an airtight container and refrigerate for up to 3–4 days. I like to store them without any extra parsley on top, then add fresh parsley after reheating.
- Reheat: Skip the microwave if you can. It will warm the carrots, but you’ll lose those lovely roasted edges. Spread them on a baking sheet and reheat at 375°F for about 8–10 minutes, or pop them in the air fryer at 350°F for a few minutes. Either method does a much better job of bringing back that freshly roasted texture.
- Freeze: You can freeze roasted carrots for up to 2 months, but expect them to be softer once thawed since freezing changes their texture. Cool them completely, freeze in a single layer on a baking sheet, then transfer to a freezer-safe bag or container. Reheat straight from frozen in the oven for the best texture.

- 2 pounds carrots, washed, scrubbed, diagonally cut into about 3-inch pieces
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon Italian Seasoning
- ¼ teaspoon salt, or to taste
- ¼ teaspoon fresh ground black pepper
- ⅓ cup grated parmesan cheese
- ¼ cup chopped fresh parsley
Instructions
- Preheat oven to 425˚F.
- Grease a rimmed baking sheet with cooking spray or line it with foil and set aside.
- Place prepared carrots in a large mixing bowl; set aside.
- Melt the butter in the microwave. Once melted, add minced garlic, Italian Seasoning, salt, and pepper to the melted butter and whisk until thoroughly combined.
- Pour the butter mixture over the carrots and toss to coat. Add in the grated parmesan cheese and mix until combined.
- Transfer carrots to the baking sheet and arrange them in a single layer.
- Bake for 20 to 25 minutes or until tender. Mix them around halfway through cooking.
- Remove from oven. Taste for seasonings and adjust accordingly.
- Sprinkle with fresh parsley and serve.

- Storing Leftovers: You can keep any leftover carrots in the fridge in an airtight container for up to 2 days.

Can I prepare them and then freeze them cooked or frozen?

I advise not to, but you absolutely can, however cooked carrots lose their firmness and texture when you freeze them. In as far as freezing them raw, again, I suggest not to because, to preserve flavor and texture, you want to blanch veggies before freezing.

I obviously can’t “tell” how fresh they are, but I would definitely go for it and make them. I would also pay close attention to the cooking time – they might need less time if the raw carrots have already softened up a bit.
