It’s a simple snack that’s ready to grab and go from the freezer whenever you need a sweet, refreshing bite!

  • A Nutritious Bite: When those sweet cravings hit, it’s this frozen yogurt bark to the rescue. It’s a dessert that gives us all those indulgent vibes without the guilt.
  • Perfect for Sharing: Whether it’s a sunny afternoon treat for the kids or a midnight snack for yourself, this bark is made for sharing.

Ingredients You’ll Need

  • Plain Nonfat Yogurt (or flavored yogurt if preferred): Offers a creamy, tangy taste that freezes wonderfully for a cool goodie.
  • Agave: Adds a touch of sweetness to the yogurt. You can also use honey, monk fruit, or any other sweetener you prefer.
  • Vanilla Extract: Infuses the frozen yogurt bark with a warm flavor that complements the berries. This is especially useful if you are using plain, non-flavored yogurt.
  • Fresh Lemon Juice: Gives a hint of zestiness, brightening up the flavors and adding a refreshing note. Lime juice also works but adds a different taste.
  • Salt: Just a pinch to enhance and balance all the other flavors, making the sweetness and tartness pop.
  • Strawberries, Blueberries, Raspberries: Berries add juicy bursts of flavor and natural sweetness, plus they make the bark look colorful and inviting!
  • Pecans & Granola: If you want some crunch and nuttiness, sprinkle some nuts or chocolate granola over the top before freezing.

How to Make Yogurt Bark

  • Prepare the Baking Sheet: Lay a sheet of wax paper over a baking sheet and set it aside.
  • Mix the Base Ingredients: In a large bowl, mix together the yogurt, agave, vanilla extract, lemon juice, and a pinch of salt until well combined.
  • Spread the Yogurt Mixture: Transfer the mixture onto the lined baking sheet and smooth it out evenly.
  • Add the Berries: Scatter strawberries, blueberries, and raspberries evenly over the yogurt layer.
  • Add Nuts and/or Granola: Sprinkle chopped pecans or granola over the top to add a crunchy texture.
  • Freeze: Place the baking sheet in the freezer and let it sit for 2 to 3 hours or until firm.
  • Cut and Serve: Use a knife or your hands to cut the frozen yogurt bark into pieces.

Recipe Tips & Variations

  • Yogurt Options: Feel free to experiment with flavored yogurts and different types of yogurt. You could even try making it with my banana frozen yogurt.
  • Sweeteners: If agave isn’t your thing, substitute with honey, maple syrup, or any sweetener you choose. Adjust the quantity according to taste.
  • Berry Varieties: Don’t limit yourself to the listed berries; feel free to mix in other fruits.
  • Texture: For an even consistency, ensure the yogurt mixture is smoothed out evenly on the baking sheet to avoid thin or thick spots.
  • Serving: Use a pizza cutter for easy and quick cutting of the bark into pieces. It works like a charm.
  • Storage Hack: Store the bark pieces between layers of parchment paper in an airtight container to keep them from sticking together in the freezer.

Serving Suggestions

  • Break It Into Pieces: Use your hands or a knife to break the yogurt bark into desired size pieces. For a cleaner cut, use a sharp knife to cut it into squares or rectangles.
  • Serving Style: Lay the bark pieces out on a serving tray but not overlapping to prevent them from sticking together.
  • Garnish: If desired, garnish with a sprinkle of extra toppings or a drizzle of honey or chocolate to elevate the visual appeal and flavor.
  • Serve Immediately: Since yogurt bark melts fairly quickly at room temperature, serve it immediately. Use it as a refreshing appetizer or a cool snack on a warm day.

Storage

  • Keep any leftover bark pieces in the freezer to maintain their texture and freshness.

The nice thing about this recipe is you can be as creative as you want with your toppings and even the flavouring of your yogurt. Definitely something to have waiting in your freezer for those temptations and entertaining guests.

  3. Marie says:

    Hi there,
Can you use mixed frozen berries instead?

    Thanks!

    1. Katerina says:

      Hi!
      I don’t see why not. ☺️

  4. Aleah says:

Kinda disappointed. The flavor of the yogurt and berries is definitely super delicious but the dessert is too cold to eat. Yes I know its a frozen dish but it is like biting into ice cream – only colder somehow? It really hurts my teeth to eat and little water crystals formed on top of the yogurt bark even though I only froze it for 2 hours. The little crystals give it a weird crunch and watered down taste I don’t enjoy. I really think this could be great but it’s too cold.

    1. Shannon says:

Aleah, I feel the same exact way. Made this yesterday and it’s just too cold to bite. Gives me brain freeze and hurts my teeth, lol. I’m thinking I might let it thaw just a tiny bit and try that. It tastes good, just can’t handle the cold.

  5. Kathleen Holmes says:

You break them up like peanut brittle, nothing even about that!

  6. Kathleen Holmes says:

Do they need to stay frozen, meaning can I take these for a snack@ work??

    1. Katerina Petrovska says:

Yes, they do need to stay frozen.

  7. Indre says:

    How big is each piece?

  8. James Ginal says:

I’ve done this, and it tastes too icy, like it has freezer burn. Is there any way around this?

    1. Katerina Petrovska says:

      Hi!
You could put wax paper or plastic wrap on top of the yogurt mixture and just pat it down over the yogurt. That should help with avoiding those ice crystals. You can also freeze it and then break it up into pieces – do this as soon as it’s frozen – and put those pieces in a ziploc bag.

      1. JillA says:

I’ve made this 4 times and when I eat it as a snack, I usually go back to the freezer 1 or 2 times. Hits the spot! I always add pecan chips for the added texture and a bit of protein.

  9. Linda says:

How long after you take a piece from the freezer does it start to thaw out? I know it is an odd question but I was thinking if I wrapped a piece or two in a napkin and took them out the door, I could eat in the car- but would that be a horribly bad idea?

    1. Katerina Petrovska says:

      Hi!
Yeah, I do that. Just before I head out, I take a couple pieces in a napkin and eat in the car. 😊

  10. Carel wheeler says:

I flavor 2 c yogurt w one pkg sugar free instant pudding or sugar free jello and made following combos: lime jello w coconut topping, chocolate pudding w crushed pretzels and peanut butter, orange jello w bananas, cheesecake pudding w crushed graham crackers, the possibilities are endless!

    1. Katerina Petrovska says:

Sounds great! I am very glad you enjoyed it! Thank YOU! 🙂
