But if you love your meat, peppers, onions, and fajitas, turn on the crockpot and git ‘er done! Also, make sure to use your favorite tomato salsa because we’re marinating the entire beef fajitas in the crockpot in that salsa. It better be good or your favorite, you know?

- Flank Steak: You can substitute with skirt steak if preferred.
- Yellow Onion: White onions can be used as a substitute.
- Red Bell Pepper & Green Bell Pepper: Offers a sweet taste and tender texture. You can use any color bell pepper. For a spicier version, chop up a jalapeño and mix it in with the other peppers.
- Tomato Salsa: Marinating the beef in the salsa brings all the flavors together. Use your favorite kind for the best results.
- Beef Broth: Keeps the meat moist and adds richness to the sauce. Vegetable broth or chicken broth will also work.
- Fajitas Seasoning Mix: The blend of spices that gives the dish its signature flavor. I use tablespoons of my homemade Fajitas Seasoning Mix
How To Make Crockpot Fajitas
With just a few simple steps, you can enjoy tender, juicy fajitas in the crockpot. Follow these easy instructions to bring this easy steak fajita recipe to life!
- Prepare the Beef: Cut the flank steak into six equal portions and place them in the slow cooker.
- Add Veggies: Slice the onions and peppers, then add them to the slow cooker.
- Mix In Salsa and Broth: Pour in the tomato salsa and beef broth.
- Season: Add the fajita seasoning, stir, and mix everything together.Cook: Cover and cook on HIGH for 4 hours or on LOW for 6 hours.
- Shred the Meat: When the steak fajitas are finished cooking, take out the flank steak, shred it or slice it, and stir it back into the slow cooker.
- Serve: Serve on flour tortillas, corn tortillas, or over rice.

How To Store Leftovers
Store all leftovers in an airtight container and refrigerate for 3 to 4 days. You can also store the fajitas in large Ziploc freezer bags and freeze them for up to 2 months. To defrost, completely thaw in the refrigerator before reheating.

Is it ok to use chuck roast instead of flank steak.
Hi!
I would suggest, if possible, to stick with using flank steak for a fajitas recipe. Flank steak is what is used for fajitas because it cooks in just minutes, while chuck roast is best for things like pot roast or beef stew.
Having said that, since you’re cooking the fajitas in the slow cooker, yes, you can use chuck roast, but because chuck roast needs to cook a lot longer, you’ll want to cook it on the Low setting for about 9 to 10 hours. Then, take it out, shred it, and stir it back in the slow cooker so to mix with the rest of the ingredients.

For chicken, I’d go with 6 chicken breasts, or around 2 pounds.
I am making these for dinner tonight. I cut everything up last night (green and red peppers, onion, and the steak) and put in a storage bag in the refrigerator overnight. Threw it all in the crockpot this morning and added the salsa and beef broth. It smelled so good all day. I just opened it to stir it and try it and it is AMAZING!!
