Quick air fryer potato wedges make an easy side dish to everything from burgers to chicken tenders. They’re even great as an appetizer, just add a side of ketchup or aioli!
If you own an air fryer, hopefully, you know by now that it’s the secret to super crispy potatoes. If not, let these air fryer potato wedges initiate you! However, I will warn you, that once you’ve tasted steamy, seasoned potatoes from the air fryer, it’s hard to go back to any other cooking method. The air fryer makes perfectly crisp, golden, fluffy potato wedges with a fraction of the effort of baking or deep frying. Just wait and see.

Ingredients You’ll Need
You really need only two ingredients to make crispy potato wedges in the air fryer: potatoes and oil! But where’s the fun in that? I include a few simple seasonings that pack these wedges full of flavor.

- Potatoes – My favorite potatoes for wedges are russet potatoes. You can use Yukon gold potatoes, too, though they may need additional cooking time.
- Olive Oil – Or your choice of vegetable oil.
- Seasonings – Pretty much anything goes, here. I season my potato wedges with paprika and an Italian herb blend, plus salt to taste. You can use chili powder, garlic powder, Herbes de Provence, etc.
Should I Soak Potatoes in Water Before Air Frying?
If you want extra crispy potato wedges (don’t we all), it’s worth taking the extra step to rinse and then soak the sliced potatoes in cold water for 30 minutes before seasoning and air frying. It’s also fine to skip this step if you’re short on time, but the potatoes won’t be quite as crisp.
How to Make Air Fryer Potato Wedges
Follow the quick steps here to make the best air-fried potato wedges. I leave the skins on when chopping my potatoes for some rustic flair, but feel free to remove them if you’d like.
- Prep the potatoes. Start by washing and scrubbing the whole potatoes, then pat them dry.
- Cut the potatoes. To cut the potatoes into wedges, slice each potato lengthwise down the middle. Then, cut each half into quarters, and cut each quarter in half lengthwise to make 16 wedges. At this point, you can soak the potatoes (see above) or go forward with seasoning them.
- Season the potatoes. Next, combine the olive oil and seasonings in a bowl. Add the potato wedges and toss until they’re evenly coated.
- Air fry. Arrange the potato wedges inside the preheated air fryer (400ºF). Make sure they’re in a single layer and cook in batches if you need to. Fry the potatoes for 10 minutes, then flip and cook for another 10 minutes until they’re crispy to your liking.
Tips and Variations
- Give them space. You may need to cook the potato wedges in batches depending on the size of your air fryer. The hot air needs room to circulate the fries to get those perfectly crunchy edges. Spread them in an even layer with space between each wedge.
- Add salt to the warm potatoes. I love hitting these wedges with a sprinkle of fleur de sel or flaky salt right as they come out of the oven. It’s important to use flaked or coarse sea salt, like Maldon salt, as table salt bounces right off the potatoes. The same applies to French fries.
- Add spice. If you’d like to add a little heat to your air fryer potato wedges, sprinkle in a little cayenne pepper or crushed chili flakes. Other good options are taco seasoning or Jamaican jerk spice, or you can make a wedge version of Cajun fries with Cajun seasoning.
- Make them cheesy. Toss the potato wedges with freshly grated parmesan before cooking for some parmesan-roasted potatoes vibes.
Serving Suggestions
Crispy seasoned potato wedges make the perfect easy side for cheeseburgers (or vegetarian black bean burgers). They’re also great with crispy air fryer chicken thighs, creamy crack chicken, or juicy steak au poivre. Just add a fresh green bean salad or roasted vegetable salad on the side, and ketchup or your favorite condiments for dipping.
I love making a few batches of air fryer potato wedges on game day to serve as an appetizer. They’re great dipped in barbecue sauce with more easy snacks like bacon-wrapped chicken bites, my 7-layer dip, and air fryer Buffalo cauliflower. Don’t forget a Bloody Mary to wash it all down!
Storing and Reheating Potato Wedges
- Refrigerate. Store leftover air fryer potato wedges in an airtight container in the fridge for up to 2 days. I like to place a clean paper towel into the container to absorb any condensation.
- Reheat. Reheating these potato wedges is as easy as returning them to the air fryer at 400ºF for a few minutes. Shake the basket about halfway through so that they crisp up again on all sides.

- Cut the potato wedges. Cut each potato in half lengthwise. Then, cut each half into quarters. Cut each potato quarter in half lengthwise, so you end up with 16 potato wedges.
- Add seasonings. In a bowl, combine olive oil, paprika, Italian herbs, and salt. Add the potato wedges to the oil-spice mixture and toss to coat evenly.
- Air fry. Place the potato wedges in a single layer in the air fryer basket (cook in batches if necessary). Air-fry for 10 minutes, then flip the potatoes (using tongs or shaking the basket). Continue air-frying for an additional 10 minutes or until they reach your desired crispiness.
- Serve. Serve the potatoes warm with your favorite condiment.
