Hey Hi Hey! Happy Sunday!

DADS!!! Happy Father’s DAY! High Five! YOU are so awesome and YOU know it!

Today, I hope you get to watch every darn sport that you can find on that big ol’ screen TV that your kids just bought you! I also hope that you will enjoy your day however YOU want to spend it!

Margaret Truman once said, “It’s only when you grow up and step back from him–or leave him for your own home–it’s only then that you can measure his greatness and fully appreciate it.” So, so true. It’s like she was talking about me and my Tato (Dad)!

Thus, for my wonderful Tato, I will be making these Salmon Burgers and enjoying the entire day in our backyard. Grilling, chit-chatting, hittin’ the Cucumber Mojito, and maybe even singing!
…so long as the rain stays away… 

BUT, Father’s Day is not the only thing we’re celebrating today. IT’s also the first day of SUMMER! Aaaaand what comes with Summer? Grilling! Very good!

So, because I’m on this grilling bender, and pineapple bender, and salmon bender, I thought putting all three together was the wisest thing to do and this was proven to be true (FYI: that rhymes) because, 4 salmon burgers were quickly inhaled by yours truly, with the help of my other half.

I mean, it’s a homemade salmon burger covered in teriyaki sauce and it’s simple and perfect and beautiful.
Adding the grilled pineapple to the mix was just WHOA!

Then, as if that wasn’t enough, I threw a bunch of things together, including yogurt and sriracha and I basically fell to the floor with the bowl in one hand and a spoon in the other. I practically OD’ed on the sauce. I had to make a second batch for the burgers…

Delicious and fun homemade teriyaki salmon burgers topped with grilled pineapple and a creamy sriracha-yogurt sauce.

Ingredients
FOR THE SALMON BURGERS
  • 4 (4-ounces each) pink salmon fillets, skin removed, coarsely chopped (If salmon is wet, please pat dry with paper towels)
  • 1 cup panko crumbs
  • 1 small yellow onion , chopped
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1/8 teaspoon chili powder
  • 1 tablespoon chopped fresh parsley
  • salt and fresh ground pepper , to taste
  • 4 pineapple rings
  • 1/3- cup low sodium teriyaki sauce
  • lettuce greens
  • red onion rings
  • pretzel buns , toasted
FOR THE SRIRACHA-YOGURT SAUCE
  • 1 cup nonfat plain yogurt
  • 1 to 2 teaspoons sriracha
  • 1 garlic clove , minced
  • 1 tablespoon lemon juice
  • salt and fresh ground pepper , to taste
Instructions
  1. In the bowl of a food processor, combine salmon, panko crumbs, onions, mustard, lemon juice, chili powder, parsley, salt and pepper; process until mixture is smooth and combined.
  2. Divide mixture evenly into 4 patties.
  3. Heat an outdoor grill to medium high; about 375F.
  4. When the grill is ready, rub the grates with vegetable oil. (I dip paper towels in vegetable oil and rub across the grate)
  5. Transfer salmon burgers to the grill, close the grill, and cook for 4 minutes.
  6. Flip the burgers and brush with teriyaki sauce.
  7. Close the grill, and cook until the patties are just cooked, about 4 minutes.
  8. Flip again and brush with teriyaki sauce; continue to cook for 1 minute longer.
In the meantime, grill the pineapple slices.
  1. Place pineapple slices on oiled grates; brush with teriyaki sauce and grill for 5 minutes.
  2. Flip the pineapple slices, brush again with teriyaki sauce, and continue to grill for 4 minutes.
Prepare the Sauce.
  1. In a mixing bowl combine yogurt, sriracha, garlic, lemon juice, salt and pepper; mix until smooth.
Build your burger.
  1. Beginning with the bottom bun, spread a tablespoon of sriracha yogurt sauce, top with salmon, add a pineapple slice, lettuce, onion, tablespoon of sriracha yogurt sauce again, and top it off with your toasted top bun.
  2. Serve.
Recipe Notes

For a light, healthier, nutritious meal, leave out the hamburger buns.
