These quick and easy mini meatloaves are baked in a muffin tin and topped with a sweet, tangy tomato sauce. Ready in under an hour and perfect for a fuss-free weeknight dinner! You can even make these ahead and freeze them for later.

I, once again, got a bottle of perfume. My other half is SO creative (insert sarcasm) that all those imaginative thoughts get in the way of his thinking, therefore he ends up buying the same thing for me, year after year. What’s more is that I have never heard of the perfumes that he buys… But if Dick’s Sporting Goods is selling perfumes, then that’s most likely where he’s getting them.
But, enough about me and my whining about not getting a plane ticket to Aruba for V-day… Let’s talk MEATLOAF! Minimized!
I have plans. I have big, big plans for these Mini Meatloaves.
For instance;
This year I am rolling out the red carpet, grabbing my film-buff friends, and hosting the hottest Award Show viewing party. Our cast of A-list drinks, Martinis and Chardonnay, will also be joining us, and appetizers such as these Mini Meatloaves will make our party worthy of Hollywood’s top movie stars. You should also note that meatloaf and cold, crisp Chardonnay were meant for each other. No joke.
But meatloaf? For a party?!? YES, silly. This is no ordinary meatloaf. It fits in the palm of your hand, it’s tasty as all can be, and it’s stuffed with amazing goodness such as brown sugar, dijon mustard, and Hunt’s® Organic Diced Tomatoes, as well as Hunt’s® Organic Tomato Sauce. Juicy, juicy, juicyyyy!
Sidenote: Research presented at The Obesity Society’s annual meeting found adding tomatoes to your meals can be an easy way to include more vegetables in your diet and get closer to meeting USDA’s MyPlate recommendations!
On the same note, it’s good to know that Hunt’s® cans their diced, whole, stewed and crushed tomatoes within hours after harvest, buuuut, before all that happens, Hunt’s® peel their diced, whole, AND stewed tomatoes using FlashSteam which is just steam from simple hot water. Some companies use lye to peel its tomatoes, which is a chemical, and that’s pretty much unacceptable. However, Lye peeling is generally recognized as safe by the FDA and has no adverse effects on the healthfulness of tomatoes.
Traditional meatloaf is made with ground beef, even veal, but here we replace the beef with ground turkey for a tender, flavorful and leaner version.

Pin ItMini Turkey Meatloaf Muffins
Ingredients
- 1 can, (8 oz) Hunt’s® Organic Tomato Sauce
- 3 tablespoons light brown sugar
- 1 tablespoon Gulden’s® Spicy Brown Mustard or Dijon Mustard
- 1 pound lean ground turkey, (you can also use ground beef)
- 1 can, (14.5 oz ) Hunt’s® Organic Diced Tomatoes, drained
- 1 small yellow onion, , chopped
- 3/4 cup panko crumbs
- 1 egg, , beaten
- 1 teaspoon Italian Seasoning
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
Instructions
- Preheat oven to 400°F.
- Lightly spray a 12-cup muffin/cupcake tin with cooking spray and set aside.
- In a small bowl, combine tomato sauce, light brown sugar and mustard; mix until combined and set aside.
- In a large mixing bowl combine all remaining ingredients and add 1/4-cup of the tomato sauce mixture to the meat mixture; using a wooden spoon, mix until everything is well incorporated.
- Divide meat mixture evenly and place into previously prepared cupcake pan.
- Place pan on baking sheet.
- Bake for 25 to 28 minutes or until internal temperature reaches 165°F.
- Top each mini meatloaf with 2 tablespoons of the tomato sauce; bake for an additional 5 minutes or until sauce is set.
- Remove from oven and let stand few minutes.
- Plate and serve with remaining tomato sauce.
