You don’t need to go out for brunch to enjoy a savory ham and cheese croissant! I’ve been making this breakfast croissant at home for years, and it couldn’t be easier. Slice a buttery, flaky croissant in half and fill it with salty ham, melty cheese, and your choice of spread. Baking gets the outside crispy while the cheese melts inside. 

Assembling these croissants on a baking sheet is an easy way to make food for a crowd in 10 minutes! Perfect with a side of fruit salad and a pineapple mimosa for Easter or Mother’s Day brunch.

Ingredients You’ll Need

  • Croissants – As many as you’ll need. These breakfast sandwiches are a great way to use up day-old or stale croissants, since baking crisps them up anyway.
  • Ham – Use leftover baked ham that’s been thinly sliced. You can also use deli ham.
  • Cheese – Swiss, Havarti, cheddar, and provolone are good options. Any meltable cheese.

Ham and Cheese Croissant

This easy ham and cheese croissant is a savory breakfast sandwich filled with smoky ham and melty cheese, baked in the oven in minutes. Dress the croissant with mayo, mustard, aioli, or any spread you'd like.

Ingredients 

  • 4 croissants
  • 8 slices cooked honey ham
  • 8 slices cheese, such as Swiss, Havarti, cheddar, or your favorite kind of melty cheese
  • Optional spreads: mayo, garlic aioli, honey mustard or Dijon mustard

Instructions 

  • Get ready to bake. Preheat the oven to 350˚F. Line a baking sheet with parchment paper or a Silpat.
  • Prepare the croissants. Slice the croissants in half. If you are using spreads, add your desired amount of mayo, aioli, or mustard to each slice of croissant.
  • Assemble. Briefly warm the ham in the microwave, about 30 seconds. On the prepared baking sheet, add two slices of ham and two slices of cheese to one side of each croissant. Top with the other half of each croissant.
  • Bake. Bake 3-5 minutes, or until the cheese is melted. The croissants should be lightly toasted.
  • Serve. Remove from oven and let stand for a minute before serving.

How to Make a Ham and Cheese Croissant

You can scale this recipe to make as many ham and cheese croissants as you’d like. The steps are the same:

  • Prepare the croissant. Slice the croissant in half, and add your choice of sandwich spread to each half. Arrange the croissant slices on a lined baking sheet.
  • Assemble. Meanwhile, warm the ham in the microwave, and add two slices of ham to one half of the croissant. Top that with two slices of cheese. Close the sandwich with the other half of the croissant.
