Easy and quick dinners are clearly the heartbeat of Diethood, but foil packs are the EASIEST type of recipes that I can get behind every night of the week. If you’ve never tried grilled foil pack dinners before, fire up the grill now!
HOW TO GRILL CHEESY ASPARAGUS IN FOIL PACKS
Grilled Asparagus is the perfect accompaniment to a summertime dinner, and with just a few ingredients, you won’t be able to get enough of this cheesy asparagus-in-foils recipe.
- Start with trimming off the woody dry ends of the asparagus.
- Tear off 4 large pieces of foil. For better results, use heavy duty foil, or double up if using regular foil.
- In a large bowl combine asparagus with olive oil, garlic, some lemon juice, and seasonings.
- Divide up the asparagus stalks between the foils and top with cheese. I used a combination of mozzarella with a bit of parmesan, but you can use whatever melty cheese you have on hand. Gruyere would be awesome!
- Fold and seal the foil packs; transfer prepared foil packs to a preheated grill.
- Cook for 13 to 15 minutes, or until asparagus is tender. To check for tenderness, I use a fork to poke through the foil and they are usually done in about 14-ish minutes, but this also depends on the thickness of the asparagus.
- Remove from grill; carefully open up the foils and welcome all of that cheesy goodness. 😍 The melty cheese is to blame for the pound of asparagus that you are about to gobble up.
While you’re at it, throw these Garlic Herb Grilled Potatoes in Foil on the grill, too. You won’t be disappointed.
HOW TO COOK ASPARAGUS FOILS IN THE OVEN
- Preheat oven to 425˚F.
- Prepare as directed and close up the foils.
- Place foil packs on a baking sheet; pop in the oven and cook for 15 minutes.
HOW TO MAKE AHEAD
I suggest to prepare the foil packs as directed, but do not cook. Simply, keep them in a cooler until ready to grill.
