Is there anything better than bacon? Of course there isn’t! So what better way to eat a side of green beans than wrapped in smoky and salty strips of bacon? These bacon wrapped green beans are one of my favorite side dishes, and I always make them for the holidays. As the green beans bake, the sugar and vinegar caramelize, giving the veggies a sweet, tart, and complex flavor unlike anything you’ve ever eaten! Trust me when I say you’re going to love these green bean bacon wraps.

- Green beans – You’ll need to trim the ends from the beans.
- Bacon – The bacon needs to be cut in half.
- Salt and pepper – Always use freshly cracked pepper.
- Light brown sugar – Dark brown sugar will work in a pinch.
- Balsamic vinegar
How to Make Green Beans Wrapped in Bacon
Ready to see just how easy these juicy green beans are to make? Here’s how to do it.
- Prep. Preheat your oven to 375F and grease a baking sheet with nonstick spray.
- Wrap. Place a bundle of about 6 green beans on each halved bacon strip. Wrap the bacon around the beans, and hold it in place with a toothpick.
- Season. Season each bundle with salt and pepper, then sprinkle brown sugar over the top. Drizzle the balsamic vinegar over the green beans and bacon.
- Bake. Move the green bean bundles to the prepared baking sheet and place them in the oven. Bake until the beans are tender and the bacon is crispy, which will take about 15-20 minutes.
Tips for Success
One thing I love about these brown sugar green beans with crispy bacon is how easy they are to make. But here are some tips to help you out.
- How to trim the tips. Trimming the tips off of green beans can be a long and boring task. The best and quickest way to do it is to line up a bunch of green beans together in a bundle. Then you can chop off all their tips at once, instead of one-by-one.
- Rotate. I like to rotate the baking sheet halfway through cooking this recipe. A lot of times ovens don’t heat evenly, which can cause the green beans to cook unevenly. By rotating the baking sheet, you ensure that all the green bean bundles will be evenly cooked.
- Use aluminum foil for easy cleanup. I recommend lining the baking sheet with aluminum foil before you use the nonstick baking spray. As the green beans cook, the brown sugar and vinegar caramelize and become very sticky. Caramelized sugar is really hard to clean off a baking sheet. If the green beans wrapped in bacon are on top of aluminum foil, then cleaning the baking sheet will only take a few seconds.

Can I Make This Recipe Ahead?
These green bean bundles are easy to prep. You can wrap them in bacon and store them in an airtight container in the fridge for 2 days until you’re ready to cook them. I recommend waiting until you’re going to bake the green beans to add the seasonings, though.
How to Store and Reheat Leftovers
These sweet and salty bacon wrapped green beans will last in the fridge for 4 days in an airtight container. You can reheat them in a 350F oven for 12 minutes, or in the microwave on 80% power in 20-second increments. The bacon will not be as crispy if you reheat this side dish in the microwave.
I do not recommend freezing these green beans wrapped in bacon. The texture will not be very good if they’re frozen and then thawed.
