Ingredients 

FOR THE SALAD

  • 2 to 3 Romaine Hearts, chopped
  • 3 cooked chicken breasts, cut into strips
  • 2 cups cubed cheddar cheese
  • 2 granny smith apples, cored and thinly sliced
  • 2 red delicious apples, cored and thinly sliced
  • 1 cup chopped walnuts

FOR THE HONEY YOGURT DRESSING

  • ½ cup plain yogurt, I use Dannon
  • ¼ cup mayonnaise, or eggless mayo
  • 2 to 3 tablespoons honey
  • salt and freshly ground black pepper, to taste
  • chopped fresh parsley, for garnish

Instructions 

  • Place chopped romaine salad in a large salad bowl.

    I made this a few weeks ago and we all loved it. Making it again tonight. I like cheddar and apples together, but LOVE crumbled blue cheese on a salad, so I used that instead. I also added a pear instead of the granny smith and used vanilla greek yogurt. I could eat this every other day it’s that good!

    Is there a specific reason your dressing calls for eggless msyo or will rgular work? Thanks !

      Hi! Regular mayo will definitely work! ๐Ÿ™‚ In as far as eggless mayo goes, it has no cholesterol and contains about 1/3 of the saturated fat found in traditional mayo.
