This Sunrise Mimosa is a gorgeous and delicious twist to the classic mimosas prepared with mangos, orange juice, prosecco, and liqueur.

Hey YA! Happy Day! Guess what time it is? It’s time for a really good Easter brunch snack. Make your Mama proud and prepare these gorgeous MOMosas for her. Errr! Mimosas. Sunrise Mimosas.

These easy to make, 4-ingredient mimosas are a delicious beverage to add to a weekend brunch. Plus, you only need a few minutes to whip them up.

While this recipe is super simple, you’ll want to take your time to get those details just right. I might be exaggerating a bit—it’s not as tricky as I make it sound, but I’m a bit of a drama queen. Forgive me!

Recipe Ingredients

Who else loves mangoes more than any other fruit in the world? Please stand up! Because I’m standing with you. Guys, I buy bags of chopped mangoes (too lazy to cut it myself) and snack on bowls of it thrice a day or add it to my guacamole. No joke. I love it *this much*, and that’s why I also included it in our Sunrise Mimosa. This tropical twist makes the classic mimosa even more tasty and refreshing.

  • Mango: As stated, I love some mangoes, but this mimosa is great with peaches and citrus, too, as in my mimosa cocktail recipe.
  • Orange Juice: Provides a fresh, citrusy base that complements the mango and balances the sweetness. Substitute with pineapple juice for a different twist.
  • Prosecco: This is a sparkling wine that adds a refreshing, bubbly element. Any sparkling wine or champagne will work.
  • Pomegranate Liqueur: Adds a rich, fruity depth and a beautiful color contrast. Grenadine can be used for a similar effect.
  • Orange Slices or Mandarin Slices (for garnish): I use these for presentation but you can leave them out.

How To Make Sunrise Mimosas

Here’s what’s up. We’re making a puree of mangoes with orange juice. The first time I made it, the puree didn’t even make it to the champagne flutes. I literally picked up the blender and drank it all straight from the jar. ’twas ah.may.zing. But! The next step is even better because that mango concoction meets up with a bottle of Prosecco. Checkit:

  1. Combine mango and orange juice in a blender and puree: This step creates the flavorful base for the mimosa.
  2. Pour a few tablespoons of puree into chilled champagne flutes.
  3. Slowly pour prosecco over the mango puree almost to the top of the flutes: Pouring the prosecco slowly helps maintain its bubbly effervescence.
  4. Slowly add pomegranate liqueur to each champagne glass.
  5. Garnish the glasses with orange slices and serve immediately.

Recipe Tips

  • Chill Everything: Make sure your prosecco, orange juice, and glasses are well-chilled before making the mimosas. This keeps the drink refreshingly cold without needing ice, which can dilute the flavors.
  • Layering Technique: To create beautiful layers, pour the prosecco slowly over the back of a spoon held just above the puree. This helps the liquids to layer gently rather than mix immediately.
  • Batch Preparation: If making mimosas for a crowd, prepare the mango and orange juice puree in advance and store it in the fridge. Pour the puree into glasses just before serving and top with prosecco to keep the bubbles fresh.
  • No-Alcohol Option: For a booze-free option, use sparkling water or club soda in place of the prosecco. Or go a whole different way and prepare a glass of this non-alcoholic sorrel drink.
  • Garnish: Besides orange slices, you can garnish with fresh berries like in my Christmas mimosas. You can also use mint leaves and edible flowers.

Serving Suggestions

A bubbly, crisp taste paired with a nice balance of orange juice is all that you will need to complete a beautifully elegant brunch. Then again, elegance will most likely go out the door after a few sips, but who cares! You deserve it!

To make your brunch even more amazing, pair the sunrise mimosas with several brunch items, like an ambrosia salad, a savory spinach quiche, and a smoked salmon dip. I also love my avocado toast alongside slices of sheet pan eggs or eggs Halifax.

An assortment of pastries such as croissants, banana muffins, and scones adds a sweet touch, while a charcuterie board with a selection of cheeses, cured meats, nuts, and crackers rounds out the meal.

Sunrise Mimosa

Sunrise Mimosa is a gorgeous and delicious twist to the classic mimosas prepared with mangoes, orange juice, prosecco, and liqueur.

Ingredients 

  • 1 large mango, peeled, pitted, and cut into cubes
  • 1 cup orange juice
  • 1 bottle (750 ml) chilled prosecco
  • pomegranate liqueur, (like Grenadine)
  • orange slices or mandarin slices, for garnish

Instructions 

  • Combine mango and orange juice in a blender and puree.
  • Pour about 2 to 3 tablespoons of puree into 4 to 6 chilled champagne flutes.
  • Slowly pour prosecco over the mango puree almost to the top of the flutes.
  • Slowly add about a tablespoon or two of pomegranate liqueur to each champagne glass.
  • Garnish with orange slices.
  • Serve.
