I have to share a little story about this amazing spinach salad with mangos. It all started with my sister, who is a salad aficionado. One day, she brought over this vibrant salad, and I was immediately hooked. The combination of sweet mangoes and crunchy cashews, all tied together with a zesty honey and lime vinaigrette, was simply irresistible. Even though I’m not usually a fan of spinach-only salads (something about the texture on my teeth), this one won me over instantly.

Now, it’s a staple in our house, especially during summer when we’re craving something fresh, but light and flavorful. Much like my Berry Caprese Salad, this one is a burst of freshness and a true crowd-pleaser.

In my perfect world, we would be swimming in cookies, cottage cheese ice cream, and cakes, but, girl, summer has arrived. Thus, spinach and salads it is! In addition to being fresh and delicious, this spinach salad is very easy to put together. Just make a quick trip to the grocery store, and you’ll have all the necessary simple ingredients.

  • Fresh spinach: Substitute with mixed greens and arugula.
  • Mangoes: Adds sweetness and a juicy texture. You could also try it with pineapple chunks or peaches.
  • Cashews: The nuts add a perfect crunch and nutty flavor. Almonds or walnuts are great alternatives.
  • Honey and lime vinaigrette: This delicious dressing ties all the flavors together with a bright, tangy sweetness. For a different flavor, you could substitute the lime with lemon juice or balsamic vinegar.

How To Make Spinach Salad with Mango

So, here’s the thing. I know it’s been a hot minute since we last discussed a salad, but honestly? I want to swim in summer salads! This spinach salad recipe is perfect for that. Plus, the honey-lime dressing is just too GOOD!

  1. Prepare the vinaigrette: Whisk together olive oil, lime juice, honey, salt, and pepper. Set aside.
  2. Prep the spinach: Wash and dry the spinach, then place it in a large salad bowl.
  3. Prep the mango: Peel and dice the mangoes, then add them to the bowl with the spinach.
  4. Toss in the nuts. Add the cashews to the bowl, giving the salad a nice crunch.
  5. Add the dressing. Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.

Ingredients 

For the Salad

  • 2 cups fresh baby spinach
  • 1 mango, peeled and sliced
  • ¼ cup cashew halves

For the Dressing

  • salt and freshly ground black pepper, to taste
