  • 1 pound penne pasta
  • cups water
  • 2 cups vegetable broth
  • 1 large yellow onion, sliced
  • ½ cup fresh basil leaves
  • 3 cloves garlic, minced
  • salt and freshly ground black pepper, to taste
  • 4 ounces cream cheese, or Neufchatel cheese, at room temperature
  • 2 to 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded parmesan cheese
  • chopped fresh parsley, for garnish, optional
  • fresh basil leaves, for garnish, optional


  • In a pasta pot or stockpot, combine pasta, water, vegetable broth, onions, basil leaves, garlic, salt, and pepper.
