Ingredients 

  • 3 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • salt and freshly ground black pepper,, to taste
  • 1 yellow onion,, diced
  • 3 to 4 cloves garlic,, minced
  • 1 teaspoon fresh thyme leaves, or ½ teaspoon dried thyme
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth, , or vegetable broth
  • cup sun dried tomatoes in oil

Instructions 

  • Heat the olive oil over medium-high heat in a large nonstick skillet.
  • Season the chicken breasts with salt and pepper, add them to the heated oil and cook for 4 minutes; flip and continue to cook for 4 minutes or until browned on both sides. Remove the chicken from the skillet and set aside.
  • Add onions, garlic, and thyme leaves to the skillet and cook for 3 minutes, stirring frequently.
  • Stir in the flour and mix until combined. Add the broth and sun-dried tomatoes.
  • Return the chicken to the skillet and bring the mixture to a boil. Turn heat down to a simmer; cover the skillet and continue to cook for 15 to 18 minutes, or until chicken is cooked through.
  • Remove from heat and let rest for 5 minutes before serving.

    So, what makes for the “creamy’ part? It seems the sauce is thickened with flour, but it doesn’t say that. Is this the ‘creamy’ part?

    I’m gonna add sour cream at the end – just because everything’s better with sour cream (or bacon)

    Also could use some heat; I’m using red pepper flakes (hot paprika would also be nice)

    I almost have no words to describe how delicious this recipe is, and that is really something for me as I am a wordy person in general. I really am not the biggest fan of sun dried tomatoes but I usually have some on hand that are left over from another recipe and the question is, how do I use these up? Now I know the answer to that question. This chicken was so far beyond amazing — I lost track of how many times my husband said it was “really, REALLY good” during dinner last night.     Could I make it earlier in the day and then just pop it in the oven at a time?

      Hi Gale! This isn’t prepared in the oven, and I never have prepared it in the oven, so I can’t say if it will even work. Do you mean to prepare the entire dish earlier in the day and then just reheat it in the oven? The sauce will be thick once it’s cooled down, but the heat will help to make it runny again.
