Instructions 

  • Preheat oven to 400˚F. Grease a standard 12-cup muffin pan with cooking spray or line with paper baking cups. Set aside.
  • In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the milk, oil, and eggs.

    Hi. First, let me say that I love your website and I love your recipes! I am an avid fan of many of your ‘lightened’ dishes. I’ve noticed that in the last week or so when I choose to ‘Print’ one of your recipes an advertisement pops up in the middle of the print. Is there any way to avoid this?!
    I know — it’s the little things in life … but this just happens to be one of my pet-peeves, especially when advertisements are already covering 25-30% of the screen and now video advertisements play automatically when a page is loaded. OK — now that I’ve vented, I feel somewhat better ๐Ÿ™‚ — but I would still like to be able to print without an advertisement in the recipe.
