Hey Hey Hello! Happiest of Mondays, everyone! Yes, Mondays CAN be happy. Stop yawning, pick up a gallon of coffee (espresso helps a bit more), sit back, relax, and jot down the ingredients to tonight’s Apple Bacon Salad recipe. Cool?
So, you guys, I just got back from Colorado – Breckenridge to be exact – and I kind of can’t come back to Earth, which is also known as 700 feet above sea level, and not 10,000! Again, that’s ten-thousand feet above sea level. Pretty dang high. It’s like flying in a plane, but not? ‘Cause you know, your feet are still on land.
ok. bad analogy. Clearly, I’m better at talking about food, and not altitudes.
Therefore…
Meet my most requested after-apple-picking-trip salad! As in, we walk out of the Apple Orchard and the first question in the car is, “DO we have bacon at home?!?”, in which my response is always, “Of course! I’m a food blogger!!”.
That’s my response to everything food-related. “You’re eating CAKE at midnight?!?”. “Well, yes! I’m a food blogger! Taste-testing at midnight is included in my job description.”…
How cute is SHE?!? I LOVE HER! That’s at the apple orchard, moments before she asked about having an apple-dinner that would include apple sauce, apple butter on toast, and baked apples.
Pretty delicious dinner menu, eh? Too bad I and the hubs were already prepared for this beautiful salad, but I did bake a couple of apples for her and her sis.
Just stop for a second, close your eyes and think about this: apples, bacon, FRENCH feta cheese, walnuts, baby romaine.
Can you taste it? Ain’t it amazing?!? Now add the Maple-Balsamic Vinaigrette. mmmmm!
What Other Ingredients Can I Put In A Fall Salad?
You can add/swap just about anything Fall-ish to this salad and it’s going to be just as awesome. Trust me because I’ve added every possible thing that I could – almonds, pears, gorgonzola, beans, veggies… it just works. Make sure there’s some greens on the bottom to, you know, make it a “salad”.

Apple Bacon Salad with Maple-Balsamic Vinaigrette Recipe
Ingredients
- 1 package (5-ounces) Baby Romaine Lettuce
- 2 cups fresh baby spinach
- 8 bacon slices , cooked to a desired crispness and crumbled
- 3 to 4 medium-sized red apples , chopped
- 1 cup chopped walnuts
- 1 cup crumbled French feta cheese
- Maple-Balsamic Vinaigrette Recipe (you want to double the recipe for this salad)
Instructions
- Combine all ingredients in a large salad bowl; gently toss to combine.
- Serve.
