Hi Hi! Hey Hey! Happy Sunday! Hope your day is filled with all the good things!

I personally just want a Sunday packed with “Friends” reruns, my feet up on the couch, and a whole cheesecake without calories. Today won’t be that day, though.

I’m spending the day in the kitchen, preparing for my dad’s Name Day celebration tonight by making my awesome Chunky Chicken Salad, my other awesome Russian Layered Salad, and THIS awesomesauce, Garlic Parmesan Cauliflower Salad!

I have been in charge of making salads and side dishes for all our parties and gatherings since I was 12 years old. Apparently, chopping up veggies is my favorite pastime.

Soooo… I realize that my hang up for all things garlic-parmesan might be getting to you, but can we just enjoy it for one more day? Pleeeease?

Cauliflower Salad

When I first made this salad, it was with a purpose. This salad was a great way to bridge the gap in our house between a garlic lover and a cauliflower hater.

It wasn’t me. It was my other half. He doesn’t like cauliflower. HOW? WHY? I mean, just dip it in creamy Ranch and you’ll never know its true colors. Am I right or am I right? Exactly.

Orrrr… you can toss that cauliflower with some of that Garlic Parmesan Salad Dressing that I like to talk about and forget about questioning the “white tree” vegetable ever again!

Cauliflower Florets with Radishes

A true winter’s delight, this cauliflower salad served with earthy radishes is a salad everyone enjoys. It’s also a great accompaniment to any main fare!

Essentially, we’re letting raw radishes and crunchy cauliflower marinate in creamy garlic for a few hours. If that doesn’t sound like the best thing to happen all week, I don’t know what will.

Garlic Parmesan Cauliflower Salad

Cauliflower florets tossed with sliced radishes, bacon, sunflower seeds, green onions, and a Garlic-Parmesan Salad Dressing that is SO incredibly good!

Ingredients 

FOR THE SALAD

  • 1 head cauliflower,, broken up into small florets
  • ½ cup sliced radishes
  • 3 green onions,, white AND green parts, sliced into thin rounds
  • 6 slices bacon,, cooked to a desired crisp and crumbled
  • ¼ cup sunflower seeds
  • 1 teaspoon chopped fresh rosemary

FOR THE GARLIC PARMESAN SALAD DRESSING

Instructions 

  • Combine all ingredients in a large bowl; mix well to combine.
  • Cover with plastic wrap and chill at least 4 hours or overnight.
  • Serve when ready.

    Hi!….I know my Hubby would love this salad….you have his two favourite ingredients…..but for some reason I could not get the Dressing Recipe to open !!

    I don’t have a problem with raw cauliflower. Cauliflower is so versatile that it can be used/substituted for so many different things. It’s a little hard when it’s raw, but still very flavorful and good. My problem with this salad would be eating radishes. I know my grandmother used to put radish in all of her salads. Radishes can be very spicy. How do you tame them? Radishes are something different for me. I think I will try some of these recipe ideas. Great ideas.

      Hi Lissa! I never thought of radishes as spicy, but now that you say so, you’re right. I just really like the added crunch. ๐Ÿ™‚
      The dressing that I used for the salad will help to soften the cauliflower as well as the radishes so long as you let it sit for a few hours or overnight. Or just skip the radishes and use more bacon. ๐Ÿ˜‰

    i cant do raw cauliflower but perhaps, a roasted version because you had me at that dressing!!!!
