Fresh Blueberry Scones

What. a. week! Welcome back, Friday!

Man! I feel like ah … bear waking up from hibernation(?)

Being stuck at home for several days definitely has its ups – sleeping-in because the entire State is shut down, chillin’ in your PJs until noon, catching up on your favorite shows, etc… But, of course with those ups come the downs. Or, in fact, it was just one down – boredom. And with that boredom, the inevitable happens – eating everything in sight because I am bored.

I chose not to be bored, and not to eat because I was bored. Instead, I baked and baked and baked… and made the others eat! I made double chocolate pancakes, blueberry scones, soda bread, pasta from scratch, and bacon-wrapped everything. I hope I get that wife and mom of the year award…

Blueberry Scones

These are the best blueberry scones I’ve ever made! Creamy and moist, each bite is packed with juicy blueberries and sweet cream cheese icing. These scones are baked to perfection and are a delicious treat that needs to be added to your brunch or breakfast menu.

And, you know what? NO butter in this recipe. I kept those calories for the nice helping of heavy whipping cream and the cream cheese for the frosting. You’re welcome…? 🤷‍♀️

The Blueberry Cream Cheese Frosting Is Delicious On Everything

While we were stuck inside, listening to each other’s thoughts, we were also dipping these amazing scones in an awesome blueberry cream cheese frosting. This stuff is da bomb! I mean, it’s so simple and sweet, you’ll want to dig in with a spoon. We did. Of course.

You know what else is great about this recipe? It’s a weekend recipe. It’s a Saturday & Sunday morning recipe. Think about it, who doesn’t want to wake up to homemade scones on the weekend? Exactly.

After inhaling the scones, I found myself making another batch of the frosting… I also hid it from the rest of the fam. I kinda ate it, all by myself. Thank the Lord that the scale and I are not on speaking terms. Because, winter.

You don’t have to believe me, BUT you should – once you get a taste of these scones, you will jump for joy when it’s time to make breakfast on the weekends!

ENJOY!

  1. Hi! Just made these, and they taste great however, they are a bit undercooked in the middle. Was I supposed to separate the scones after I cute them into quarters? I just cut them into quarters but left them in the circle. I’m assuming that was my problem as they were still touching while they were baking! Will try again some other time and possible just cut them into rounds with a biscuit cutter! Thanks for the recipe.

  2. I made these today, but I forgot the sugar. The frosting makes up for it though. Definitely good. I’m going to try the recipe the correct way again soon. Thank you. 🙂

Hi Kelaiah!! SO happy to know that you’re enjoying the scones. I’m glad they worked out, even without the sugar! But other than keeping things nice and sweet, sugar also helps baked goods stay soft and moist… definitely make the scones again…they’ll be even better!! 😉 Have a great rest of the day!

  3. Wow! That’s a ton of snow. We live in FL, but my husband is from Indiana. His family talks about all the snow and how cold it gets up there. I have to admit, I’m kinda jealous from time to time. They all tell me, one winter and you won’t want to live here anymore! Ha! Those scones look so good! I have only made pumpkin scones, but would love to give the blueberry ones a go! I just gotta figure out the modifications for the eggs. My youngest is allergic, so it’s been an adventure!

OMG so much snow. We’re in the same country and we’re having different weather. CA is having drought issue this year… no rain nothing. No snow in the mountain…no ski trip… and it’s like mid 60F. It’s true, some winter days in SF can be warmer than some days in the summer! Anyway, what I love about these scones is that you made blue cream cheese frosting! I’ve never done it before. And I just got this blueberry which cost close to $10! I’m going to use it and make this. You made me totally inspired to bake (and it’s rare!). 🙂

These look beautiful. The husband is always in charge of the snow. I am sure to have something good in the oven though for when he comes back. It is a win win.

Burr! I almost feel guilty about the gorgeous weather we’ve been having in California. I’m such a wimp..I’d be wearing three layers of clothing if I was there 🙂 These look absolutely fabulous and that cream cheese dip is amazing!

I’m in the suburbs of Chicago, so I feel your pain with the cold, but it looks like you put your time to good use. This recipe looks so delicious! I love a good blueberry scone, and these look wonderful! Thanks for sharing your recipe!

  9. Stunning, absolutely stunning the white white white landscape… well, the white everything! Husband is adorable! And I am so making these scones, even if I only have dried blueberries. We love scones but for some reason the blueberries always get used for muffins. I prefer these perfect scones!

  10. OMG… I was miserable with just the freezing temps we had… you had wayyyy worse!! Both you and your hubs deserve an award for managing through that snowfrozen event!

Oh man, look at that snow! And these scones – gorgeous! I could wake up to these every single morning!

  14. You deserve the mother of the year award for these gorgeous looking scones. No frosting necessary though. 🙂

I am hating on the snow as well. All done now, I want it to go away. I had to wait 3 days for my snow guy to come (mechanical difficulties) and dig me out. The alley is still scary and I haven’t tried driving in it yet.

For pics … check out the post.

Love, love, love, love, love, love, love, love scones. I don’t have the snow issue you guys do, but it is pour rain right now, a cold, nasty rain. These would be perfect. And that frosting. Oh my gosh, it sounds so, so good. I don’t blame you for hiding the second batch from everyone!

YES! Scones totally need the pizzazz of frosting! Of course anytime frosting is breakfast appropriate, I’m in 🙂
