I had all intentions to kick this week off with a recipe for cupcakes, but as you can see, plans changed…

However, that doesn’t make this salad any less delicious. Ahem… It’s just a bit healthier than a cupcake.

Lemme tell ya… I used to be the most organized person. I’m talking, closets-with-clothes-assorted-by-color type of organization. Post-it-notes-in-pretty-pastel-colors-telling-me-what-to-do-every-hour-of-the-day type of organization… These days, I am lucky that my head sits on my shoulders, otherwise I would lose it.

… and now I sound like my mother!

I thought that August 20-something was like next week. Yes, I see the date on my calendar that sits on my fake office desk, a.k.a., our dinner table. I also see the date on the bottom right-hand corner of my laptop, yet it didn’t register that August 19th, or August 20-something was, like, this week! Ugh! I should have checked my “editorial calendar” a bit sooner, but I forgot all about it.

Thus, without a plan, this week you are going to get not one, but TWO avocado recipes, back to back! That’s a good thing, isn’t it?! Besides, I also got to use my new Good Cook kitchen tool, the Avocado Slicer, more times than I care to admit…I eat a TON of avocados! It’s that green tool in the photo. All you do is remove the pit with the pitter that’s located at the end of the slicer, and then just slide the tool along the inside of the skin to get some pretty, uniform avocado slices!

And, because I am a Good Cook Kitchen EXPERT ;-), I also received a Citrus Reamer and a Citrus Zester! Aaaaaand because we all love giveaways, I am giving away all three tools to TWO of you! YAY! I LOVE kitchen tools!!

But, this berry-avocado thing had to happen sooner or later. I love berry season because I think I can live on berries alone, with a side of avocados. And a few Spinach Blackberry Salads. Aaaaand the Avocado Feta Salsa! Man, I’m gonna miss summer… waaaaah!

Okay, I think Fall might do us just fine.

Very Berry Avocado Salad

Sweet and refreshing Very Berry Avocado Salad combined to make a healthy and delicious summer treat.

Calories: 612 kcal
Ingredients
  • 1/4 wedge Iceberg Lettuce , chopped or whole
  • 6 strawberries , sliced
  • 1/2 cup fresh blueberries
  • 1/4 cup fresh mozzarella chunks
  • 1 avocado , sliced
For the Dressing
  • 1 lime , juiced
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • fresh ground pepper , to taste
Instructions
  1. Place lettuce in a salad bowl.
  2. Add strawberries, blueberries, mozzarella, and avocado slices.
  3. In a small mixing bowl, whisk together lime juice, olive oil, salt and pepper.
  4. Pour over salad and gently mix it all together.
  5. Serve.

    I didn’t do much, going back to work on the 3rd so I got my daughter ready for school and organized the house a bit before I head back to work.

    I spent some time with my daughter this weekend. We had a great time together. I got in some much needed yoga and had coffee with a friend!

    Last Sunday My husband and I went food shopping at about four different stores. It was nice that he went with me on his only day off He’s a good guy.

  4. This salad looks amazing! This past weekend we were visiting family in Utah. Did some hiking, took a tour of some caves, but mostly ate, ate, ate! I consumed more brownies and ice cream than any normal person should in a month. Whoops.

  5. This past weekend I went to a wedding which was great. Also it was the first wedding I was ever at that never had an entree, just multiple hors d’oeuvre courses.

    This weekend I went out to eat with my hubby at a local casino, food was good machines were as usual bad and I remembered why I had not been in a real long time. LOL, but it was good to get away and I only lost $20.00 so I really did not do bad, would of wasted that much going to a movie..LOL.

    My husband and I drove up north to visit my family and especially to spend time with my grandma. We had a great time and it was surprisingly relaxing for having so much family around (you know how it goes…).

  9. Kate, I have given up having an “editorial calendar” for my blog whilst writing a gluten-free and grain-free cookbook. (I’ve tried and it just ain’t happenin’! Plus, life gets in the way. Don’t know how you do it…with kids yet! Mom must be helping with the girls, no?) Fabulous salad recipe…I just adore avos with any kind of berry!

  10. I actually attempted baking my first babka – it was pretty hard and I messed up activating the yeast properly. But it still tasted ok (husband approved).

    What a gorgeous salad. I made a healthy black eyed pea salad filled with veggies over the week-end that I will have for lunch all week. I went to a cherry orchard and picked 20 pounds of cherries then spent time in the garden.
