One of my favorite breakfast meals to make in my Slow Cooker is this Veggie Omelette. It’s loaded with vegetables and protein, making it the perfect way to start the day. Also, when I couldn’t care less about carbs, I make this Crock Pot Creamy Banana French Toast. 😍
Ingredients for Omelette
The ingredients for this recipe are so simple. You can have this thrown together in no time at all.
Here’s what you’ll need:
- Eggs
- Milk
- cheese
- Garlic Powder
- Chili Powder
- dried herbs
- small broccoli florets
- Red bell pepper
- Yellow Onion
- Garlic
How To Make an Omelette in the Slow Cooker
Are you ready to make the best veggie omelet without all the work? Let’s do it!
- First, lightly grease the inside of the slow cooker/crock pot with cooking spray; set aside.
- Then, in a large mixing bowl combine eggs, milk, salt, pepper, garlic powder and chili powder; using a whisk, beat the mixture until mixed and thoroughly combined.
- Next, add the broccoli florets, peppers, onions and garlic to the slow cooker; stir in the egg-mixture. By the way, you can also fry the broccoli, peppers, onions, and garlic for few minutes, or until just softened, before adding them to the slow cooker.
- Cover and cook on HIGH for 2 hours. Start checking at 1 hour 30 minutes. Omelette is done when eggs are set.
- Next, sprinkle with cheese and cover; let stand 2 to 3 minutes or until cheese is melted.
- Cut the omelette and serve.
How to Store Slow Cooker Veggie Omelette
As with all food that gets stored in the refrigerator or freezer, leftovers from your slow cooker need to be cooled on the countertop to about room temperature before placing into the fridge or freezer for storage.
- Fridge: Your leftover veggie omelette can be stored the in the fridge in an airtight container for 4 days.
- Freezer: You can also freeze it. Just, let it cool down completely before putting it in an airtight container. You can store it in the freezer for up to 3 months.
- Reheat: Reheating the veggie omelette is super easy. Simply bring it to room temperature on your counter, and then heat on your stove top on low. It should only take about 10 minutes to heat through. Do not reheat the veggie omelette in the slow cooker.
NOTE: Also, do not put a refrigerated slow cooker insert into the heating base while it’s still cold; the ceramic could crack and food is at risk of not reaching proper food safety temperature.

- 1/4 cup grated parmesan cheese
- salt,, to taste
- fresh ground pepper,, to taste
- 1/2 tablespoon dried Italian Seasoning
- 1/2 teaspoon garlic powder,, or to taste
- 1/2 teaspoon chili powder,, or to taste
- 1 cup broccoli florets
- 1 small red bell pepper,, diced
- 1 small yellow onion,, finely chopped
- 2 cloves garlic,, minced
FOR GARNISH
- 1 cup shredded cheddar cheese
- cooked diced red peppers or diced tomatoes,, optional
- finely diced onions,, optional
- chopped fresh parsley,, optional
Instructions
- Lightly grease the inside of the slow cooker/crock pot with cooking spray; set aside.
- In a large mixing bowl combine eggs, milk, parmesan, salt, black pepper, Italian Seasoning, garlic powder and chili powder; using a whisk, beat the egg mixture until thoroughly combined.
- Add broccoli florets, diced peppers, chopped onions, and garlic to the insert of your slow cooker; stir in the prepared egg-mixture.
- Cover and cook on HIGH for 2 hours. Start checking at 1 hour 30 minutes for doneness. Omelette is done when eggs are set. You can also cook it on LOW for 3 to 3.5 hours.
- Sprinkle with cheese and cover; let stand 2 to 3 minutes or until cheese is melted.
- Turn off the slow cooker.
- Optional: Garnish with chopped peppers, tomatoes, chopped onions and fresh parsley.
- Cut the omelette into 8 pieces and serve.

Just be careful not to put the crock itself in the fridge. I did that, and the next morning I took it from the fridge and put it in the crock pot, turned it on and my crock cracked in half!
