Hey Hey, dear friends! Did you notice that? Another GIVEAWAY! Smells like Christmas-time to me!
Too soon? Okay.
So remember that one time you found out your husband was BUYING breakfast-food before heading into work?!? The husband that has a food-blogger wife? The husband that has a fridge filled to the rim with gourmet food because of his food-blogger wife!?!? Can you tell that I’m a little, uhm… irked?
He says he couldn’t convince himself to eat a Butternut Squash Lasagna at 7 am, and that Spinach, Kale and Spaghetti Squash Fritters just don’t fit in with his whole manly eating habits. But that’s only in front of others. At home? He inhaled ’em! Booyah!
Whatever. Don’t get me started. And I swear I’m in a good mood!
Aaaaanyway. TO honor his wishes, I decided to make 30 Breakfast Burritos, stuff ’em with all-the-things and freeze them. Best decision of ever. BUT, not because of him! Because of ME! I now have breakfast burritos in the freezer, yo! That’s like a gold mine at 7:30 am when everyone is running around, trying to get ready.
Can you tell I’m totally in love with these? My besties over at STAR have a new lineup of marinated and deliciously stuffed Olives, and because I want to add them to every.thing., I threw a handful of their Tomato and Peppers Marinated Olives in our burritos here, and that was also the best decision of everrrr. Texture-y, salty, flavorful-y… it all works so well together. Just take my word for it. I know what I’m talking about ’cause, I’m a food blogger. buahaha I’m like totally kidding!
But, yeah. These burritos are going to freak you out. Lil’ bit of eggs, lil’ bit of olives, loads of cheese, tomatoes, green onions… AND they’re wrapped in tortillas! The burrito kind. The BIG ones! Hallelujah!
One more thing. The beauty of these amped-up homemade breakfast burritos is that they are great for breakfast, obviously, or, if you live at my house, they are awesome for brinner, too! The perfect throw-together, really.

Breakfast Burritos
Ingredients
- 2 tablespoons butter
- 6 to 8 eggs
- 3 tablespoons water
- 2 cups Mexican Blend Cheese
- 8 (8-inch) whole wheat flour tortillas
- 1 cup chopped tomatoes
- 1/2 cup sliced STAR Tomato and Peppers Marinated Olives
- 4 chopped green onions , white and green parts
Instructions
- Melt butter over medium heat in a nonstick skillet.
- Combine eggs and water in a mixing bowl; lightly beat to combine.
- Stir in the cheese.
- Add egg mixture to the skillet and cook until eggs are done, stirring frequently.
- Heat tortillas according to package directions.
- Divide egg mixture between the tortillas.
- Top with tomatoes, olives, and onions.
- Fold tortillas burrito-style.
- Serve.*
Notes
To reheat: unwrap and discard plastic wrap, then wrap burrito in a paper towel. Microwave for 1-1/2-2 minutes, or until hot.
