Refreshing Cucumber Mint Mojito

Bottoms up! Cheers! Slàinte! Na Zdravje! 🍻 A totally refreshing twist on the classic mojito cocktail, these cucumber mojitos are so cool, crisp, and bursting with fresh flavor. Made with muddled cucumber, fresh mint, lime juice, and white rum, it’s an easy shaken cocktail that pairs perfectly with a chicken kabob at summer BBQs.

I’ll show you how to make an easy homemade simple syrup that you can use for this mojito and more cocktails this summer, like vodka lemonade and White Claw slushies!

Mojito Ingredients

If you love a classic Cuban mojito, you’ll love this fresh cucumber version. It’s the perfect way to sip and chill! Here’s what you’ll need to make it. Scroll to the recipe card for the full measurements.

  • Water and Sugar – For the homemade simple syrup. You can also use coconut sugar or granulated sugar instead of making the simple syrup, but it’s super easy and takes minutes on the stovetop.
  • Cucumber Slices – Fresh and thinly sliced. Save a few for garnish because we’re fancy like that.
  • Fresh Mint Leaves – Don’t skip this because it’s what makes a mojito a mojito.
  • White Rum – Classic choice, but feel free to use vodka if that’s what you have on hand.
  • Fresh Lime Juice –  Brightens up every sip. Bottled lime juice works, but only as a last resort!
  • Club Soda or Seltzer – Adds a fizzy finish.

How to Make Simple Syrup

Once you make simple syrup at home, you’ll never buy store-bought again. It’s really as easy as:

  • Dissolve the sugar. Stir until the sugar dissolves. Let it cool. That’s it!
  • Combine and heat. Combine equal parts water and sugar in a saucepan, and bring it to a boil.

Cucumber Mojito

These cucumber mojitos are a light, refreshing twist on the classic mojito recipe, made with fresh cucumber, mint, lime juice, and rum.

Ingredients 

  • 1 cup water
  • 1 cup sugar
  • 10 cucumber slices, plus a few more for serving
  • ¼ cup fresh mint leaves, plus more for garnish
  • 4 ounces (2 shot glasses) white rum, or to taste
  • 2 limes, juiced
  • 4 ounces club soda, or seltzer water

Instructions 

  • Prep. Fill two drinking glasses with ice and a few cucumber slices, and set aside.
  • Make the simple syrup. Combine the water and sugar in a small saucepan and bring to a boil. Stirring occasionally, continue to boil for 5 minutes, or until the sugar is dissolved. Remove from heat, set aside, and let cool.
  • Muddle. Add 10 cucumber slices, mint leaves, 1 to 2 ounces of simple syrup, and lime juice to a cocktail shaker (or a mason jar). Muddle well until the cucumber is macerated and the mint is broken down.
  • Shake. Pour in the rum, cover tightly, and shake vigorously to combine.
  • Serve. Strain the cocktail into the glasses, top with soda water, garnish with a fresh mint sprig, and serve.

Notes

  • Store the remaining simple syrup covered and in the refrigerator for up to 1 month.

How To Make a Cucumber Mojito

When making cocktails, it’s helpful to have a cocktail shaker and a muddler, but not mandatory. A fork for muddling and a jar with a lid for shaking works perfectly! These mojitos come together in just a few easy steps.

  • Make the simple syrup. Prepare a batch of simple syrup following the directions above, and let it cool. (Or skip this and use granulated or coconut sugar if you’re short on time!)
  • Muddle. In a cocktail shaker, muddle together cucumber slices, fresh mint, lime juice, and a splash of simple syrup until the cucumbers are nice and juicy.
  • Shake it up. Add rum, cover tightly, and give it a good shake.
  • Serve. Fill glasses with ice and extra cucumber slices. Strain the cocktail over the top, finish with a splash of club soda, and garnish with fresh mint.
