When life gets chaotic, I find that one really helpful thing to know is that dinner is taken care of. And by “taken care of,” I don’t necessarily mean fast food, takeout, or cereal. We’ve all been there, but it’s not ideal – I would rather have a genuine, home-cooked frozen meal ready to go. 

The solution? Healthy freezer meals! Cooking real food and storing it in your freezer is the best way to nourish your family, even when you don’t have time to cook. Also, you don’t have to set aside a ton of time to make all kinds of labor-intensive recipes—it’s the best way to meal prep. My favorite way to cook for the freezer is to double a recipe that I’m already making for dinner and freeze half of it. So simple!

What Dinners Are the Best to Freeze?

Some foods simply don’t make the list of best things for freezer cooking, including watery vegetables and fruits, creamy sauces, and cooked salmon. The issue lies in the water content, which forms ice crystals in the freezer. Once thawed, these items become mushy, deflated, and overly moist, losing their appealing textures and flavors.

However, there’s a great way to utilize your freezer, especially for busy individuals or new moms looking for efficient meal planning solutions. Certain foods are champions of the freeze-and-reheat method, emerging just as delicious—if not more so—than on the day they were made. Hearty dishes such as most meats, casseroles, stews, and soups, along with baked treats like muffins and cookies, stand up wonderfully to freezing. This category represents a fantastic approach to freezer cooking, ensuring that you’ll always have a satisfying meal at the ready.

How To Prepare Meals for the Freezer?

Each dish may have its own special instructions, such as freezing certain items separately. In general, though, there are a few important rules you should know:

  1. Let the Food Cool Down. Freezing hot food can cause some issues, so it’s usually best to let your food cool to room temperature before packing and freezing.
  2. Keep the Air Out. To avoid freezer burn, press out as much air as possible before sealing your bags or fill a freezer safe container almost to the top before adding the lid. If using plastic wrap or foil, wrap foods very tightly, avoiding air bubbles. Note that if you are freezing liquids, you need to leave 1 inch of room at the top of your container so that the food has room to expand in the freezer.
  3. Mark with the Recipe and Date. It’s best to rotate your frozen food, so that good leftovers aren’t forgotten in the back of the freezer! That’s why I recommend marking each item with the date, the name of the recipe, and any special instructions for reheating. When it’s time to make dinner, you have all the information you need, and you can easily use your older leftovers first.
  4. Consider Flash Freezing. Place the food – veggies, meats, etc – on a baking sheet, not touching and in a single layer, and freeze until frozen solid. Then, pack the frozen items in freezer bags, and you’re good to go! Frozen baked goods and frozen vegetables are great this way.

So, without further ado, let me introduce 20 of my all-time favorite easy freezer meals! This varied and colorful collection has a little something for everyone, and each recipe is guaranteed to freeze and reheat beautifully.
