Sweet and refreshing Very Berry Avocado Salad combined to make a healthy and delicious summer treat.
I had all intentions to kick this week off with a recipe for cupcakes, but as you can see, plans changed…
However, that doesn’t make this salad any less delicious. Ahem… It’s just a bit healthier than a cupcake.
Lemme tell ya… I used to be the most organized person. I’m talking, closets-with-clothes-assorted-by-color type of organization. Post-it-notes-in-pretty-pastel-colors-telling-me-what-to-do-every-hour-of-the-day type of organization… These days, I am lucky that my head sits on my shoulders, otherwise I would lose it.
… and now I sound like my mother!
I thought that August 20-something was like next week. Yes, I see the date on my calendar that sits on my fake office desk, a.k.a., our dinner table. I also see the date on the bottom right-hand corner of my laptop, yet it didn’t register that August 19th, or August 20-something was, like, this week! Ugh! I should have checked my “editorial calendar” a bit sooner, but I forgot all about it.
Thus, without a plan, this week you are going to get not one, but TWO avocado recipes, back to back! That’s a good thing, isn’t it?! Besides, I also got to use my new Good Cook kitchen tool, the Avocado Slicer, more times than I care to admit…I eat a TON of avocados! It’s that green tool in the photo. All you do is remove the pit with the pitter that’s located at the end of the slicer, and then just slide the tool along the inside of the skin to get some pretty, uniform avocado slices!

But, this berry-avocado thing had to happen sooner or later. I love berry season because I think I can live on berries alone, with a side of avocados. And a few Spinach Blackberry Salads. Aaaaand the Avocado Feta Salsa! Man, I’m gonna miss summer… waaaaah!

Okay, I think Fall might do us just fine.
Got berries? Got avocados? Hit print and GO!
- ¼ wedge Iceberg Lettuce, chopped or whole
- 6 strawberries, sliced
- ½ cup fresh blueberries
- ¼ cup fresh mozzarella chunks
- 1 avocado, sliced
- 1 lime, juiced
- 1 tablespoon olive oil
- ⅛ teaspoon salt
- fresh ground pepper, to taste
- Place lettuce in a salad bowl.
- Add strawberries, blueberries, mozzarella, and avocado slices.
- In a small mixing bowl, whisk together lime juice, olive oil, salt and pepper.
- Pour over salad and gently mix it all together.
