On days like this I figure that not everything has to be baked or fried; hubs is on grill-duty and I’m on drink(ing)-duty. Hallelujah!
Um… the kids… I need to go find those. Don’t worry! They are around here… somewhere…
If you’re still with me, can we just, like, take a moment and have a happy hour together? You and me. And this Strawberry Pom Mojito.
I have to tell ya – Mojitos are by far my favorite cocktail to make. It’s versatile and it’s always SO DAMN GOOD! Two of these drinks and I’m on cloud 9. Three, and I’m in bed. I know… can’t hang! I used to be able to down 7 of ’em just a few years back, but age happens… Whatev!
Needless to say, I enjoy this drink muchalot! My husband enjoys this drink muchalot to the tenth power! He won’t admit it because it’s a little red and a bit girly, but ’tis the truth. And I know it looks better on me with my summer dress and all, but real men wear red (or pink), so that’s that.
It also makes it that much better when you have a little help from your friends. In this instance, the wonderful people over at OXO sent me this terrific gadget that hulls strawberries!! It’s that little black tool on the left of the photo below. This Strawberry Huller does an incredible job of getting rid of only the part that you don’t need. Press the button to release the leaves and hull, and you’re good to go!
Are we ready to muddle some mint and strawberries, and drown them in a bit (a lot) of rum? Who’s with me? Remember, we’re enjoying happy hour together. Let’s do this!
HAPPY MEMORIAL DAY!
- 6 strawberries
- 1/4 cup fresh mint leaves
- 1 lime , juiced
- 1/2 cup pomegranate juice
- 2 to 3 shot glasses white rum
- 1 tablespoon honey , you may add more if needed
- Sprite or Lime Soda
- strawberries and mint leaves for garnish
Fill two glasses with ice and set aside.
Muddle strawberries, mint leaves, and lime juice in a shaker glass.
Add in the pomegranate juice, rum, and honey; mix well.
Divide mixture evenly in prepared glasses.
Slowly pour in lime soda; fill to the rim, or as desired.
Garnish with strawberries and mint leaves.
