On days like this I figure that not everything has to be baked or fried; hubs is on grill-duty and I’m on drink(ing)-duty. Hallelujah!

I have to tell ya – Mojitos are by far my favorite cocktail to make. It’s versatile and it’s always SO DAMN GOOD! Two of these drinks and I’m on cloud 9. Three, and I’m in bed. I know… can’t hang! I used to be able to down 7 of ‘em just a few years back, but age happens… Whatev!

Needless to say, I enjoy this drink muchalot! My husband enjoys this drink muchalot to the tenth power! He won’t admit it because it’s a little red and a bit girly, but ’tis the truth. And I know it looks better on me with my summer dress and all, but real men wear red (or pink), so that’s that.

It also makes it that much better when you have a little help from your friends. In this instance, the wonderful people over at OXO sent me this terrific gadget that hulls strawberries!! It’s that little black tool on the left of the photo below. This Strawberry Huller does an incredible job of getting rid of only the part that you don’t need. Press the button to release the leaves and hull, and you’re good to go!

Strawberry Pom Mojito

Refreshing Mojito Cocktail made with strawberries and pomegranate juice.
Serves: Serves 2
Ingredients
  • 6 strawberries
  • ¼ cup fresh mint leaves
  • 1 lime, juiced
  • ½ cup pomegranate juice
  • 2 to 3 shot glasses white rum
  • 1 tablespoon honey, you may add more if needed
  • Sprite or Lime Soda
  • strawberries and mint leaves for garnish
Instructions
  1. Fill two glasses with ice and set aside.
  2. Muddle strawberries, mint leaves, and lime juice in a shaker glass.
  3. Add in the pomegranate juice, rum, and honey; mix well.
  4. Divide mixture evenly in prepared glasses.
  5. Slowly pour in lime soda; fill to the rim, or as desired.
  6. Garnish with strawberries and mint leaves.
  7. CHEERS!

    The strawberry huller is interesting! I have old fashion strawberry huller that is just like a wide tweezers. But this one is even cooler! I’ll look into this. I use a knife to cut out like this. Considering how much we eat strawberries this sounds like a handy tool. :) Love your mojito!!! Pretty and refreshing drink!

    I could have sworn that said “Strawberry Porn Mojito” and I could not. get. here. fast enough to check out what strawberry porn could be. Yolk porn I understand.

    I will admit a slight bit of disappointment when I realized my mistake.

    My strawberry huller isn’t quite so high tech and I don’t have a muddler (must plan another trip to the food equipment supply store … what a hardship) but this drink sounds like it would be quite refreshing in the hot summer months ahead. And it looks pretty too.

    If I make the recipe and drink both glasses myself, does that make me bad? :)

    I miss the days when I could inhale a gazillion cocktails and make it through the night. This mojito looks so enticing – maybe I could handle three and still be coherent. :D
