Red, White and Blue Tiramisu <— that rhymes!

Oh you guys, you guys, you guyyyyys! THIS tiramisu – IN.SAAANE!
Sidenote: who just busted out Cypress Hill-style, singing, “Insane! Insane in the membrane!”?? I SURE DID!

By the WAY, Happy FriDAY! Look at that, rhyming again! I’m thinking, in my next lifetime I’m going to be a rapper. MC KatPet – look for me!

But, about last night. I had a total meltdown about why nobody can make ME dinner, because I’m the one making dinner for everyone else all the time, and because I was so hungry, I didn’t know what I wanted… nothing sounded good… so I attacked a bag of awesome little cheesy rice crisps and called it a night.

Okay, that’s a lie. I also had a big piece of this tiramisu. Then I went to bed, happy. Never underestimate the power of dessert.

And now that it’s fiiiiiinally summer, I believe desserts like this are absolutely appropriate.

Here’s the dealio… This isn’t an exactly waist-line-friendly tiramisu cake – even though I did try to cut out the cals just a bit with some fat free cream cheese – buuuuuut it’s the perfect dessert for 4th of July, AND we all know that holiday-calories don’t count. And the fruit on top is totally healthy. So. Take it as you will. Besides, it’s no bake! Doesn’t that count for everything?

Ugh… just hop on the treadmill for 12 hours. 😉 It’s worth it! Think about it… layers of creamy, frangelico-flavored filling, spread over espresso-soaked ladyfingers. !SWOON!

Red, White and Blue Tiramisu {NO BAKE Dessert!}

Layers of ladyfinger cookies soaked in espresso, covered with a luscious, creamy mascarpone cheese mixture and topped with your favorite red and blue berries!
Prep Time: 20 minutes
Total Time: 20 minutes
Servings: 18 servings

Ingredients 

  • 1 tub, (8-ounces) Mascarpone Cheese, softened
  • 2 packages, (8-ounces each) Fat Free Cream Cheese, softened
  • 1 cup + 1 tablespoon sugar, , divided
  • 2 tablespoons Frangelico, (you can use any other Hazelnut Liqueur)
  • 1 cup chilled heavy whipping cream
  • 36 ladyfingers
  • 1 cup brewed espresso, , cold (you can also use regular brewed black coffee)
  • 1 cup chocolate shavings
  • strawberries, , sliced
  • blueberries

Instructions 

  • Combine cheeses and 1 cup sugar in your mixer's bowl; mix until creamy and smooth, about 4 to 5 minutes.
  • Add Frangelico and continue to mix just until combined.
  • In a separate mixing bowl, combine chilled heavy cream and 1 tablespoon sugar; beat heavy cream until it just holds stiff peaks.
  • Fold the whipped cream into the mascarpone mixture until combined.
  • Spread about 1/4-cup of the mascarpone mixture on the bottom of a 9x13 glass baking dish. This is just to hold the ladyfingers in place.
  • Layer half of the ladyfingers over the mixture.
  • Generously brush the ladyfingers with half of the espresso/coffee; let stand 5 minutes.
  • Take half of the prepared mascarpone mixture and spread it over the ladyfingers.
  • Top with chocolate shavings.
  • Layer the remaining ladyfingers.
  • Generously brush the ladyfingers with half of the espresso/coffee; let stand 5 minutes.
  • Spread remaining mascarpone mixture over the ladyfingers.
  • Position the blueberries in the top left corner of the tiramisu to form the blue portion of the flag.
  • Arrange the sliced strawberries in horizontal lines across the tiramisu, leaving about 1 inch between each row, to form the stripes.
  • Place in the fridge for at least 4 hours, overnight is best.
  • Slice and serve.
