I don’t know why, but salads like this just speak to me. All the chopping of ingredients, all the mixed flavors and textures… it’s my love language. The tang with the sweet, the salty, and the creamy? It’s like I love food or somethin’!
I call this, an appetizer salad. A few scoops of salad, a couple wedges of pita bread and you should be satisfied. SHOULD be. You might want to grab some more – I don’t blame you, NOT a bit, ’cause that’s what I did. Just keep in mind that it’s supposed to be shared with your friends.
I know. It’s been a hot minute since we last shared olives in a salad, but honestly? I want to swim… NO. I want to LIVE in summer salads!

Said the girl who JUST stress-ate a jar of these black olives by STAR. It’s not my fault that they are ready to eat straight from the jar, you know? But they were even better in our salad!
I sliced up all the olives found in said jar, pitted and diced a few avocados, halved a pint of colorful grape tomatoes, cubed creamy salty feta, added STAR Capers, squeezed some lime juice over the whole darn deliciousness, and a little bit of heaven me up with my mouth. The End.
Now think about yourself eating those ingredients and feeling healthy and happy and full. I can imagine this easily because I just had some. With a handful of pita wedges. SO SO GOOD.

Olives and Avocado Salad with Tomatoes and Feta Cheese
Ingredients
- 1 jar (5.3 ounces) STAR Pitted Ripe Olives without liquid, sliced into thin rounds
- 4 avocados , pitted, diced
- 1 pint grape tomatoes , halved
- 2 tablespoons STAR Capers
- 2 cups cubed light feta cheese
- juice of 2 whole limes
- 2 tablespoons STAR Extra Virgin Olive Oil
- 1 teaspoon Italian Seasoning
- salt and fresh ground pepper , to taste
- Pita Bread Wedges
Instructions
- In a large salad bowl, combine sliced olives, diced avocado, tomatoes, capers and feta cheese; set aside.
- In a small mixing bowl whisk together lime juice, extra virgin olive oil, Italian seasoning, salt and pepper; whisk until well incorporated. Taste for seasonings and adjust accordingly.
- Pour dressing over salad and gently toss it all together.
- Serve with pita bread cut into wedges.
