Olives and Avocado Salad with Tomatoes and Feta Cheese – Delicious, colorful and summery avocado salad with black olives, tomatoes and feta cheese.
Freshy fresh in my mouth! Sometimes, salads can be so so good.
AND, it’s Friday! Bam. Welcome back!
Hi Hi, friends! Summer is a commmmin’! I can’t even wait. I am so excited for this long weekend, so excited for these next few days of sleeping IN! God, I miss sleep!! And to think that I used to fight my parents at bed time, wanting to stay up and play Super Mario. On Nintendo NES.
Now, my kids fight with me about their bed time, every night…
Karma, GO AWAY!

SO! Let’s eat this avocado salad and talk Memorial Day and feel the sun.
I don’t know why, but salads like this just speak to me. All the chopping of ingredients, all the mixed flavors and textures… it’s my love language. The tang with the sweet, the salty, and the creamy? It’s like I love food or somethin’!
I call this, an appetizer salad. A few scoops of salad, a couple wedges of pita bread and you should be satisfied. SHOULD be. You might want to grab some more – I don’t blame you, NOT a bit, ’cause that’s what I did. Just keep in mind that it’s supposed to be shared with your friends.
I know. It’s been a hot minute since we last shared olives in a salad, but honestly? I want to swim… NO. I want to LIVE in summer salads!
In my perfect world, we would be swimming in cakes, but gurrrrrrl, Summer has arrived. We need to tone it down, a bit…
Said the girl who JUST stress-ate a jar of these black olives by STAR. It’s not my fault that they are ready to eat straight from the jar, you know? But they were even better in our salad!
I sliced up all the olives found in said jar, pitted and diced a few avocados, halved a pint of colorful grape tomatoes, cubed creamy salty feta, added STAR Capers, squeezed some lime juice over the whole darn deliciousness, and a little bit of heaven me up with my mouth. The End.
Now think about yourself eating those ingredients and feeling healthy and happy and full. I can imagine this easily because I just had some. With a handful of pita wedges. SO SO GOOD.

I just started Keto and I have not had one single recipe from you, that I did not like. And…same goes for my husband and CHILDREN! And I have to have the world’s worst pickiest eaters.
