Did you realize that we’re more than half way through the year? Or did the Halloween decorations at the store remind you of it?! What the?!?!
Ummmm….helllllooooo! I’m still enjoying summer! We’re still going to the pool!!! Stop the insanity! Jeez! (Yes, I am shouting!)
Sorry about the rant, my dears, but I get really annoyed with the whole Halloween in August deal. Thanksgiving in September. Christmas in July! At least wait for the first day of Fall before getting all up in my grill with sexy nurse costumes.
Now, about that pasta…
There’s garlic in it. And butter. The end.
I’m tellin’ you, never underestimate the power of a good pasta dish. No… a GREAT pasta dish!
Well. This Garlic-Butter Spinach and Pasta dish is a once a week deal. My other half is obsessed with garlic. Even more obsessed with pasta. The man can live on spaghetti, and he wants me to come up with a garlic and chocolate cake. Lawd, help us!
But, this delicious meal sitting before you is probably the quickest Olive-Garden-Chef’s-Special type of food you’ll ever make! You will even feel all-Italian (unless you are Italian) because there’s going to be a big pot of water with pasta on one end of the stove, and another large skillet at the other end. And you’re going to be stirrin’, and crushin’, and seasonin’… ooooooh, you gonna have a great time with this one!
However, in order to enjoy this, you really need to love garlic. And butter. Did I hear a ‘HELL YEAH!’?! Of course I did!!
Aaaaand, before you run, I have one more thing to tell you…

- 8- ounces (half of 1-pound box) Farfalle Pasta
- 5 tablespoons butter
- 3 to 4 garlic cloves , crushed
- 5 cups fresh spinach
- 1 teaspoon dried basil
- salt and fresh ground pepper , to taste
- fresh Parmigiano-Reggiano shavings , optional
- Prepare pasta following the directions on the box.
- In a large skillet, melt butter over medium-low heat.
- Add crushed garlic and continue to cook until fragrant.
- Add spinach, season with salt, pepper, and basil, and cook until spinach is wilted; about 1 minute or so.
- Remove from heat and pick out the garlic; discard. (optional)
- Drain cooked pasta and add to spinach; mix well.
- Top with fresh Parmigiano-Reggiano shavings
