Hey buddies! How was your week?

Mine would be totally better if this zit would just go away. It’s so big that I seriously could charge it rent. Like, downtown-Chicago-two-bedroom-apartment rent.

The darn thing is just sitting there, lookin’ all big and bossy on my right cheek. My husband thought it was a mosquito bite. Putting makeup on it doesn’t help – it makes it stand out even more! Got any tips for me? Home remedies? I hate this thing. It needs to pack up and move!

In other news, I made you Fried Zucchini Chips. Aaaand I am going to make your breath smell like garlic for about 16.8 hours.

The Garlic Vinaigrette is pretty amazing. In all honesty, I could just sop it up with a slice of fresh baked bread. Actually, I did do that last week. I made a batch of these Croissants with Sesame Seeds and Feta Cheese and I just dipped and dipped and dipped away… One of the best “meals” I’ve had in a long time! The next day I decided to continue with my dipping, but only this time it would be with zucchini.

I always knew that summer was coming to an end once my mom started serving this particular zucchini dish. In Macedonia, zucchini, garlic vinaigrette, and August go hand in hand. Come August, this is the most frequent side dish to just about any meal, especially grilled meat. OR it is served as an appetizer with a side of Rakija. That is, Moonshine. Homemade. BURNS like hell!

I pass on the Rakija thing and enjoy them as is.

If you have never had zucchini rounds with garlic, you must must must make them right now! Okay, soon is fine, too! And, if you’re not a zucchini fan, I think you might want to give it just one more try

Fried Zucchini Chips with Garlic Vinaigrette

Zucchini rounds coated in breadcrumbs, fried to a crisp, and dressed with a drizzle of a garlic vinaigrette.

Ingredients 

For the Zucchini

  • 4 tablespoons olive oil
  • 2 small zucchini, , sliced in 1/4-inch thick slices
  • 2 whole eggs, , lightly beaten
  • salt and fresh ground pepper, , to taste
  • 1/2 cup plain breadcrumbs
  • 4 tablespoons shredded parmesan
  • 1 teaspoon dried thyme

For the Dressing

  • 2 cloves garlic, , minced
  • 4 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • salt and fresh ground pepper, , to taste

Instructions 

  • In a large
    skillet heat the olive oil over medium heat.
  • Combine beaten eggs, salt and pepper in a small dish.
  • In a separate shallow dish, combine breadcrumbs, parmesan, and thyme.
  • Coat zucchini slices with the egg, then dredge a few at a time in the prepared breadcrumbs.
  • Fry the zucchini in batches until golden brown, turning once.
  • Drain on paper towels.
  • Sprinkle with salt.
  • Prepare the dressing by whisking all ingredients in a small bowl until thoroughly combined.
  • Drizzle over zucchini and serve warm.
