Ana’s Yogurt Cupcakes with Strawberry Cream Cheese Frosting

These soft, moist Yogurt Cupcakes with Strawberry Cream Cheese Frosting are sure to be a hit with both kids and adults alike. They’re perfect for parties, or just a sweet snack!

Saturday. Bright and early Saturday. She hopped out of bed and, with a huge smile on her face, she screamed, “I’m ready for small CAKES!”.

On Friday night I told Ana that in the morning she and I would make cupcakes while the baby took a nap. Well, things don’t always go as planned. Try explaining that to a toddler.

There’s a Macedonian saying… If you can’t deliver, don’t make a promise to a young child or to an elderly.

It’s not that I couldn’t deliver, but the little one just didn’t want to take that 9 a.m. nap. Growth spurt, maybe? Dunno. But, needless to say, we struggled for a while; Ana cried and screamed, while Aleksandra just stared at her with a big smile on her face. Finally, around 11 a.m. Aleksandra fell asleep.

I let Ana “help” me in the kitchen quite often. She bangs the pans together, she stirs my mixes (flour all over the counter), and she sings into the wooden spoons. Lovely kid.

But this day was different. In preparation for her first day of preschool, that would be tomorrow, I have been giving into every one of her demands. Guilt took over me. Ugh… I even gave her the jar of Nutella. And a spoon.

See this photo above? This is how she made cupcakes… She ate Nutella and watched! “My hands are busy”, she told me. “You make, I watch”.

…Until the frosting part… Aye aye aye… Notice the perfect cupcakes. 😉

So before I lose you, let me tell you one more thing, and then I’ll talk about the actual cupcakes.

After we made the cupcakes, she insisted on me photographing them and putting them on “Faithbook“. (hehehe) Okay, I said, no problem…what’s the big deal. Well, the big deal came when she saw people’s comments under her, “pitchkur”. She loved it so much that she can’t get over it. On Sunday she crawled out of bed and the first thing out of her mouth was for me to open up “Faithbook” so she could see her “pitchkur”. It doesn’t stop there.

After staring at the comments for a few minutes, she said she wanted me to share this on my blog. How does she know this stuff? And why can’t I just say NO?! Guilt, I tell you, Guilt. It’s taking over my life. These weren’t meant for sharing. Lets just hope I get better at this…I should not feel guilty, I should not feel guilty, I should not…

The cupcakes.

They are super easy. Like cake-out-of-a-box easy. Yep. Out of a box. Because I had to try out Hungry Girl’s method; Cake mix, 1 cup yogurt, 1 cup water. Voila. Did you get that? No eggs, no oil, nada. Just yogurt and water.

Anywho. The cupcakes were moist, not as tall, sweet, and crumbly. So if you like all of that, or don’t mind it, go for it.

The frosting, however, is not from Hungry Girl, but it is still quite delicious! In fact, there’s 3 cups of powdered sugar in it. Plus a stick of butter. And if you follow the instructions carefully – DRAIN the strawberries – you will have a perfect strawberry cream cheese frosting.

Ana’s Yogurt Cupcakes with Strawberry Cream Cheese Frosting

These yogurt cupcakes start with a box of cake mix, so they're a breeze to whip up! Add some sweet strawberry cream cheese frosting on top, and they're irresistible.

Cook Time: 25 minutes
Total Time: 40 minutes
Servings: 24

Ingredients 

For the Cupcakes:

  • 1 box of Cake Mix, , I used Lemon, but you can use whichever one you want
  • 1 cup Nonfat Plain Yogurt, , I used Dannon
  • 1 cup Water

For the Frosting:

  • 8 whole Strawberries
  • 1 (8 oz.) package Cream Cheese, softened
  • 1 stick butter, , softened
  • 3 cups powdered sugar

Instructions 

For the Cupcakes:

  • Preheat oven to 350.
  • Line a cupcake pan with cupcake papers; set aside.
  • In a large bowl combine the cake mix, yogurt, and water.
  • Beat with an electric mixer for 2 minutes.
  • Pour the cupcake mixture into the cupcake pan.
  • Bake for 22 to 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Transfer to a wire cooling rack and allow to cool completely before frosting.

For the Frosting:

  • Place a bowl under a strainer or a colander.
  • Put the strawberries inside the colander and mash with a potato masher.
  • Let the strawberries drain, otherwise your frosting will be watery. I drained them for close to an hour. Then I drank the drained strawberry juice. 🙂
  • In a medium bowl, beat the butter and cream cheese until smooth.
  • Add in the powdered sugar, gradually, and the mashed/drained strawberries.
  • Continue to mix on medium-low speed until the sugar and strawberries are well incorporated, and the frosting is smooth.
  • If the frosting is a bit runny because the strawberries didn’t drain well, place the frosting in a plastic container, cover, and put it in the fridge for about 20 minutes.
  • The frosting makes 3 cups.

      I admit, it is a bit difficult to run this blog with both girls. I wake up at 5 a.m., right after the baby’s first feeding, and start to work on the blog for the next 2 hours, until Ana wakes up. The next time I get to the blog is when they go down for a nap… many times they don’t take a long nap at the same time and that sucks. 🙂
