Steel-Cut vs. Rolled Oats
Steel-cut oats are whole oats that have been roughly chopped. They’re a bit like the chunkier, less-processed relatives of rolled oats and quick oats, and they take longer to cook and soften. For this reason, overnight steel-cut oats are heartier and chewier than classic oats.

Overnight Steel Cut Oats
Ingredients
- ½ cup steel cut oats
- 1 cup water
- ½ cup milk
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon, optional

Instructions
- Cook the oats. Add steel-cut oats, water, and milk to a saucepot. Bring to a boil, watching carefully so the liquid doesn't boil over. As soon as it boils rapidly, reduce the heat and cook for 1-2 minutes. Remove the oats from the heat and stir in vanilla extract and ground cinnamon if you are using it.
- Refrigerate the oats. Let the oats cool for a few minutes, then transfer them into two containers or jars with lids. I use small mason jars. Refrigerate the oats for 8 hours or overnight.
- Serve. If needed, add a splash of milk to the oats before serving to make them creamier. Top the oats with cherries or berries and chocolate chips. Serve and enjoy.

How to Make Overnight Steel-Cut Oats in 3 Steps
Unlike traditional no-cook overnight oats recipes, you will need to kickstart the softening process by boiling your steel-cut oats on the stove first, which is SO quick and easy.


- Cook the oats. In a saucepan, bring the steel-cut oats, milk, and water to a boil. Immediately reduce the heat and then simmer for 1-2 minutes.


- Flavor the oats. Afterward, take the oats off the heat. Stir in your vanilla extract and cinnamon (if using).
- Refrigerate. Now, cool the oats for a few minutes, then divide them between two jars or lidded containers. Place the steel-cut oats in the fridge and let them soak overnight. For creamier oats, stir in additional milk when serving. Add your toppings and enjoy!
