PINA COLADA FLOATS RECIPE
Happy Meatless Monday!! My Keurig is filled to the rim, but I think I need an IV filled with coffee to wake me up this fine morning.
Guess how incredibly lame the husband and I are. We’re old and we can’t hang. The party animals we once were are long gone.
Saturday night we went out with the intentions to bar-hop all night long… we barely made it past 10:30 p.m. Both yawning and complaining about the loud music… we were pathetic. What’s worse is that just after two pina coladas, I was slurring my words and practically falling asleep while standing. Booooo…
So that’s that. Maybe I was just really tired… 😉
In other news, though, I made you Pina Colada FLOATS! How else am I to welcome the first official week of Summer?!
I’m so excited that it’s finally here! I’m treating everyone to Pina Coladas and ice cream!!
The only things I love more than ice cream AND lightweight sweeter-than-cake booze are my children! 😀
I think this Float is my new summertime “snack'”. Mentally, I am ready to enjoy this beauty each and every day during this hot season. “Mentally” – key word. The first paragraph of this post explains it all…
But, yeah, this real life, concentrate-mixer inspired dessert has all the ingredients that my little heart desires on a hot summer day.
Seriously? In my perfect world, ice cream would always be Vanilla and it would be without calories.
Also? Pina Coladas and Chardonnay would be the only things pouring out of the kitchen faucet.
Without further ado, and because it’s Monday and my brain can’t *think*, I present to you Pina Colada Floats – Bacardi, please take over.

Ingredients
- 10 ounces can of Bacardi Mixers Pina Colada Frozen Concentrate
- 2½ cups Seltzer Water
- ½ cup white rum
- 2 cups ice
- 2 cup Vanilla Ice Cream
Instructions
- In a blender, combine frozen concentrate, seltzer water, rum, and ice.
- Blend until smooth.
- Add 2 scoops of ice cream in 4 tall glasses.
- Pour Pina Colada mixture over ice cream.
- Serve.

Looks delicious! I’m curious how the calories come out to 46 however. When I calculate it it comes to approximately 185 calories BEFORE adding the ice cream.
