Aaaaallllrighty then! It’s Monday! Happy Monday, friends! I’m glad you’re here.

Today I am… barely awake. Matchsticks are holding up my eyelids. Kidding.

Last night I had family and friends over for my Name Day and we partied celebrated up until, like, now.

I’m still trying to kick out a few people.
Some family members are majorly enthusiastic about parties and they never wanna leave. You got some of those, too?!?
Yah, gotta love ’em!

Truth be told… I’m one of ’em.

Is it still cool to call this a recipe even though I am using store-bought cookies? Er. Cakes?

Once in a while I like to share some good ol’ food from the good ol’ country. For instance, these Resanki. It would be illegal for me to not share this recipe with the rest of you. Everyone needs to have a bite of these amazing little cakes.

One of my dear friends brought a tray of these Resanki to my daughter’s Christening last month and I just could not stop eating them. I didn’t even come up for air.
I sure do know how to show my appreciation.

Over on the other side of the pond, these jaffa cakes come in all different brands/names; Jaffa Cakes, Ressana, Delicje, Krakus, etc…  They are all wildly popular and for a good reason – they are damn good!

Jaffa Cakes are cookie-sized cakes and have three layers: a sponge-cake base, a layer of orange  jelly and a coating of chocolate. I know Walmart carries them. If you haven’t had one, you really, reeeeallyyyyy should!

However, today we’re going to kick them up a notch by adding a layer of orange buttercream in between two cookies (or cakes) and sandwiching them together.
The shredded coconut adds a lovely texture, as well as a pretty and festive appearance.

These cakes are miraculous a few hours after putting them together. They get softer, the flavors start to mesh and your first bite will have you thanking me to the moon and back! 😉

Hop on to Amazon or stop at Walmart and buy a few packages of Jaffa Cakes because, you know, you will need ’em. Oranges, too. AND butter and shortening.

Orange Buttercream Filled Jaffa Cakes {Resanki}

Festive sandwiched Jaffa Cakes filled with Orange Buttercream and covered in shredded coconut.

Total Time: 20 minutes
Servings: 24 servings

Ingredients 

  • 4 packages Jaffa Cakes
  • FOR THE FILLING
  • 4 tablespoons unsalted butter, , softened
  • 1/4 cup vegetable shortening
  • 2 cups powdered sugar
  • 1/2 teaspoon orange zest
  • 2 tablespoons fresh orange juice
  • 1 teaspoon pure vanilla extract
  • 1 cup finely shredded coconut

Instructions 

  • Combine butter and shortening in your mixer's bowl and, at low speed, gradually beat in the powdered sugar, orange zest, orange juice and vanilla; beat until blended.
  • Turn the mixer on High and beat for 3 minutes, or until smooth and fluffy.
  • Using a pastry bag or a teaspoon, pipe about a tablespoon size of filling onto half the Jaffa Cakes.
  • Cover with the remaining cookies on top of the filling and lightly press to form sandwiches.
  • Spread the shredded coconut on a shallow plate and roll each cake in the coconut so to cover the sides.
  • Arrange cakes on a serving platter and let stand, lightly covered with a kitchen towel, for 2 hours.
  • Serve.
