Also? Have we talked about how I’m notorious for making whole roasted chicken and eating it all.week.long? Yeah, I do that quite often. Ain’t nobody got time to sit in the kitchen all day, every day.
The good news is that I found a much better way to prepare roasted chicken – rub it with mayo and throw it in a bundt pan. That’s it.

How to Marinate Whole Chicken with Mayo for Easy Roasting in a Bundt Pan:

This, my dear friends, is the marinade we will be using. It contains only 3 things: KRAFT Avocado Oil Mayo, lemon juice, and thyme.
The key is to rub this marinade all around the bird, including underneath the skin. I don’t eat the skin – I remove it once it’s fully cooked – but my piece is still just as flavorful as the rest of the chicken.
Another thing to remember is to stuff the cavity of the chicken with lots of lemons and seasonings. DON’T skip that part – it’s super important because it adds flavor, of course.
Last, but not least, it is also important to remember to NOT try to cook a whole chicken at 400F. It will be dry. Take it from someone that knows. The key is not to be like me. INSTEAD, we will fire her up at high temperature for just a bit of time, and then lower the temp so it cooks inside, nice and slow.
Golden brown, tender, juicy. Just how we want our roasted chicken.

Ingredients
- 1/2 tablespoons olive oil
- 2 large yellow onions,, quartered
- 4 large carrots,, cut into large pieces
- 3 cloves garlic,, minced, divided
- salt and fresh ground pepper,, to taste
- 1/2 cup KRAFT Avocado Oil Mayo
- 2 tablespoons dried thyme,, divided
- 1/4 cup fresh lemon juice
- 1 whole lemon, cut in wedges
- 1 (4 pound) whole chicken,, giblets removed
Instructions
- Preheat oven to 450F.
- Lightly grease a bundt pan with cooking spray.
- Arrange onions, carrots, half of garlic, salt, pepper, and oil on the bottom of the bundt pan; toss to combine and set aside.
- In a mixing bowl, combine mayo, half of dried thyme, lemon juice, and remaining garlic; whisk to thoroughly combine.
- Remove giblets from chicken cavity; season cavity with salt, pepper, remaining dried thyme, and lemon slices.
- Cover the hole of the Bundt pan with aluminum foil.
- Place the chicken on top of the covered hole of the Bundt pan.
- Rub the chicken all over and underneath the skin with previously prepared mayo-mixture.
- Place in the preheated oven and cook for 25 minutes.
- Lower temperature to 375F and continue to cook for 1 hour, or until a meat thermometer registers at 165F degrees.

I love that Kraft is giving us great tastes in line with their brand. Kraft Avocado Mayo is so versatile that I have many thoughts on how to use it. I thing the first thing I would like to try it on would be Salmon Steaks. First I would rub them with the Avocado Mayo, then wrap them in foil and stick them on the grill. This could very well be dinner tonight.
