Didn’t think roasted chicken could get better than this Roast Chicken Stuffed with Garlic and Rosemary Cream Cheese, but I was wrong! MAYO makes it all great-O.
P.S. HI HI recipe hunters! Happy Day! How goes it?! Thanks for asking – I’m also doing well! Just kind of keepin’ on and waiting for summer weather to arrive any minute now. 65 degrees in May is not what I was expecting…
On the flip side, because of the milder weather, I can still use my oven to prepare this delicious chicken dinner without running to turn on the A/C…

Also? Have we talked about how I’m notorious for making whole roasted chicken and eating it all.week.long? Yeah, I do that quite often. Ain’t nobody got time to sit in the kitchen all day, every day.
The good news is that I found a much better way to prepare roasted chicken – rub it with mayo and throw it in a bundt pan. That’s it.
Better news? Rubbing KRAFT’s Avocado Oil Mayo all around our pretty bird resulted in a juicier, absolutely flavorful, and downright delicious chicken dinner.

This, my dear friends, is the marinade we will be using. It contains only 3 things: KRAFT Avocado Oil Mayo, lemon juice, and thyme.
The key is to rub this marinade all around the bird, including underneath the skin. I don’t eat the skin – I remove it once it’s fully cooked – but my piece is still just as flavorful as the rest of the chicken.
Another thing to remember is to stuff the cavity of the chicken with lots of lemons and seasonings. DON’T skip that part – it’s super important because it adds flavor, of course.
Last, but not least, it is also important to remember to NOT try to cook a whole chicken at 400F. It will be dry. Take it from someone that knows. The key is not to be like me. INSTEAD, we will fire her up at high temperature for just a bit of time, and then lower the temp so it cooks inside, nice and slow.
Golden brown, tender, juicy. Just how we want our roasted chicken.
Grab yourself a bottle or two of KRAFT Avocado Oil Mayo (it comes in a 12-oz, 22-oz, and a 30-oz), few lemons, and a bird. Things are about to get exciting!

I would use it for my sister in law’s famous chicken salad.
I would put this on my pizza or as a dipping sauce for my fries.
I can’t wait to try Avacado Oil Mayo on my favorite grilled chicken! Chicken tenders, seasoned with salt, pepper & garlic powder, rubbed with mayo, wrapped in a bacon strip & grilled! The result is incredible! Moist, flavorful grilled chicken & never dry!
This looks great.
If love mayo in many unique ways..
I.e..in place of butter like you’ve done with your chicken..I slather in bread in place of butter for grilled sandwiches..to die for!
Topping for baked fish too..jazzed up with lemon and other goodies….so good..an old Florida fisherman gave me that tip when I was first married.
I would use in a spicy chicken salad sandwich
