This Tortellini Skewers with Olives Tomatoes and Cheese recipe is a perfect party or holiday appetizer! A festive plate with cheesy tortellini, manzanilla olives, grape tomatoes and fresh mozzarella cheese threaded on skewers.
AN EASY HOLIDAY PARTY APPETIZER RECIPE
That one time I ate and ate and ate tortellini and olives and tomatoes and mozzarella cheese straight off the skewers and I didn’t stop until there was no mo’. Also? punctuation marks are overrated.
Hi Hello Hey! Guess what! Remember my whole talk about last Friday and taking my little ones to see Santa? And how they fuhreak out every time they get near him? You guys! It was a success! They in fact hugged him and sat next to him and gave him a list of toys they wanted and all that jazz. How fun! I was proud. And a bit moved because that just means they’re growing and a fat dude in a red suit ain’t got nothin’ on ’em. 😉

I want to tell you this was all about Christmas dinner planning, buuuuut it was just another manic Monday. I wished it was Sunday, ’cause that’s my eat-all-you-want day.
I cheated and ate more than a Monday should allow ’cause, you know that whole spiel about Mondays are when we all “start” to diet. Day.
I guess what I’m trying to say is, with all the riff raff in this world, all the uncertainty and quandary, the only true thing we can know in this life and have control over is…
…an enormous platter filled with some of our favorite foods threaded on a skewer.
This is how we do it. The biggest, fattest appetizer ever includes basically everything I love minus the salami. I decided to go meatless on you today, but that doesn’t mean that you can’t include it.
Also? My favorite snack, STAR’s Pimiento Stuffed Manzanilla Olives are all over these skewers and for a reason(s); sugar free, cholesterol free, trans fat free, low carb AND gluten free. Olives contain omega 9 monounsaturated fat and are a good source of antioxidants including vitamin E.

Green Olives are best known as a garnish in martinis, but they have many, many other uses: you can add them to salads, such as a potato salad or a macaroni salad. You can also add them to deviled eggs, pasta, pizza, etc… And obviously, you can also eat them straight off a skewer. Drizzled with a bit of STAR’s Signature Series Extra Virgin Olive Oil and STAR’s Balsamic Vinegar, these skewers are just everything I want out of life forever and ever. Really I do.

Pin ItTortellini Skewers with Olives Tomatoes and Cheese Recipe
Ingredients
- 1 package, (20-ounces) multi-colored cheese stuffed tortellini
- 1 tub, (8-ounces) "cherry-size" Fresh Mozzarella Balls
- 1 jar, (10-ounces) STAR Pimiento Stuffed Manzanilla Olives
- 1 pint grape tomatoes
- About 24, (10-inches long) wooden skewers
- 2 tablespoons thin strips of fresh basil
- drizzle of extra virgin olive oil
- drizzle of balsamic vinegar
Instructions
- Cook tortellini according to the package instructions.
- Drain the tortellini and cool with running cold water. Drain and pat them dry, making certain they are completely cooled.
- Begin to thread about 3 tortellini to each skewer, followed by a fresh mozzarella ball, 3 olives, 1 grape tomato, 3 more tortellini, two more olives, and top with one more grape tomato.
- Continue to do so until you run out of ingredients.
- Sprinkle with long strips of basil.
- Drizzle with extra virgin olive oil and balsamic vinegar.
- Serve on a long serving platter.
