Making cookies for breakfast has truly revolutionized my mornings. I mean, they’re cookies. For breakfast!

Hi Hi! How goes it, friends? Can we talk about kitchen-envy? I have it, and I’m all green about it!

I recently had a couple of friends over for brunch and, amongst other things, I served these uber healthy breakfast cookies with a side of homemade Cinnamon Dolce Lattes. (If you’re thinking, “she knows how to brunch”, well, you’re absolutely right.)

So, as we were enjoying our cookies, one of my friends was taking down the recipe and said she was going to make the cookies as soon as possible in her new Frigidaire Professional Back-Control Gas Range.

Just two days later, she called me to tell me that, a) the cookies turned out to be awesome, and b) that I need a new oven range.

Me: “WHY? Mine is only 18 months old.”

She: “Well, in MY oven, these cookies were done in under 10 minutes! I burnt the first batch because I followed your directions”

Me: “Say what?!”

Next thing you know, I’m in her kitchen admiring all of her new Frigidaire Professional® appliances, and making a Christmas Wish List (in May) called, My Dream Kitchen, where I can bake these delicious cookies, and it goes a little something like this:

Speaking of a new oven, how about breakfasting with cookies? You up for it? According to my friend and her new Frigidaire Back-Control Gas Range, they’re done in a hot minute! Fingers crossed, I will soon find out!

And, I know I say this all the time so you’re allowed to roll your eyes, but I LOVE these cookies!

Nuts and Fruits Breakfast Cookies are packed with dried fruit, crunchy walnuts, oats, and practically every other healthy ingredient. These fruit cookies are a great on-the-go breakfast!

Ingredients
  

  • 1 cup Ultragrain All-Purpose Flour
  • 1/2 cup whole wheat flour
  • 1/2 cup oat bran
  • 2 tablespoons ground flaxseed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup light brown sugar
  • 3 tablespoons butter , melted
  • 1 teaspoon pure vanilla extract
  • 2 eggs , lightly beaten
  • 1/2 cup dried fruits (I used dried cherries and dried blueberries)
  • 1/2 cup ground walnuts

Instructions
 

  • Preheat oven to 350F.
  • Line two baking sheets with parchment paper and set aside.
  • In a mixing bowl, whisk together the flours, oat bran, flaxseed, baking soda and cinnamon; whisk until well combined and set aside.
  • In a separate mixing bowl, combine brown sugar, melted butter, vanilla, and eggs; stir until incorporated.
  • Stir in dried fruits.
  • Add flour mixture to egg mixture and stir until moist and completely combined.
  • Stir in walnuts.
  • Drop mounds of dough onto prepared baking sheets, 2 inches apart.
  • Bake, one sheet at a time, for 10 to 12 minutes, or until edges are lightly browned.
  • Remove from oven and let cool on baking sheet for 1 minute.
  • Transfer to wire rack and cool completely.

Notes

The cookies come out quite large; about the size of 2 regular chocolate chip cookies.
