Ingredients
1cupUltragrain All-Purpose Flour
1/2cupwhole wheat flour
1/2cupoat bran
2tablespoonsground flaxseed
1/2teaspoonbaking soda
1/2teaspoonground cinnamon
1cuplight brown sugar
3tablespoonsbutter, melted
1teaspoonpure vanilla extract
2eggs, lightly beaten
1/2cupdried fruits(I used dried cherries and dried blueberries)
1/2cupground walnuts
Instructions
Preheat oven to 350F.
Line two baking sheets with parchment paper and set aside.
In a mixing bowl, whisk together the flours, oat bran, flaxseed, baking soda and cinnamon; whisk until well combined and set aside.
In a separate mixing bowl, combine brown sugar, melted butter, vanilla, and eggs; stir until incorporated.
Stir in dried fruits.
Add flour mixture to egg mixture and stir until moist and completely combined.
Stir in walnuts.
Drop mounds of dough onto prepared baking sheets, 2 inches apart.
Bake, one sheet at a time, for 10 to 12 minutes, or until edges are lightly browned.
Remove from oven and let cool on baking sheet for 1 minute.
Transfer to wire rack and cool completely.
Notes
The cookies come out quite large; about the size of 2 regular chocolate chip cookies.
