Hi, ya!

We are doing something different today! We are going to discuss food products, groceries, healthy muffins, and Garden Lites, The Delicious Vegetable Company. These guys and gals create products with clean ingredients and veggies. I love where this is going.

So I know that we mostly come here for recipes, and that is what we find here, 99.9% of the time, buuuut sometimes, some things come up, or I run into them at the grocery store and feel the sudden urge to tell you all about it.

For instance, this little chocolate number is keeping me caught up with all my veggies plus it tastes so dang good! What I couldn’t believe is that there’s zucchini and carrots in there, and they are the first two ingredients listed. One, you can’t taste either one of those veggies whatsoever, and two, they are delicious enough for a 7 year-old that was afraid of coming near green vegetables.

Then there’s these amazing Blueberry Oat Muffins. They are making my life 10 times healthier while not requiring this mom to argue with her kids about eating their serving of vegetables.

All varieties of Garden Lites Veggie Muffins are gluten-free, low in calories, high in fiber, dairy-free and nut-free. Individually wrapped, these muffins can be popped into the microwave for about 35 seconds before you’re ready to eat. Music to my ears when I hit the alarm button 15 times and am now over 15 minutes late. Besides, they make chillin’ in the car-riders lane a whole lot more enjoyable.

Garden Lites are pretty much the best thing to happen to my mornings since the rise of green smoothies. Before I discovered these, I was at the blender every other day making my Healthy Blender Muffins. Yes, they’re healthy, homemade and awesome – of course. How-ever, the addition of Garden Lites to my life makes the difference between me getting up in the morning 30 minutes sooner to make said muffins, and me getting up in the morning 30 minutes later because I finally can.

I love all that stuff, clearly, but also, what I care mostly about are these Superfood Veggie Cakes. They are packed with kale and cauliflower, are also gluten free and only 100 calories! Win Win Win. I’ve served them as a side dish to a chicken dinner, but are also great for lunch or an after school snack.

Finally, reason #112 why I love these muffins and cakes: they are truly on point with the “always eat your veggies” message. Healthy and quick, yet flavorful and tasty.

All Garden Lites products are frozen and can be found in the freezer section at your local grocery store, and they only take seconds to minutes to heat and enjoy.

    I used to buy the blueberry oat muffins faithfully from Costco, but suddenly they are no longer sold there (only the chocolate flavor is available). I’ve searched all over town and the internet. What happened to these muffins? They were the best tasting gluten free product ever!!!
