Classic steak fajitas are a quick and easy dinner made with pan-fried beef strips, tender bell peppers, and onions served in warm flour tortillas with your favorite toppings.
Prep. Heat the olive oil in a cast iron skillet or a pan set over medium-high heat.
Sauté the veggies. Add the bell peppers and onions to the skillet; season with 1-1/2 tablespoons of the fajitas seasoning mix and cook for 5 to 6 minutes or until tender, stirring frequently. Transfer the vegetable mixture to a plate and set aside.
Cook the steak. Add the sliced steak to the skillet; season with 1-1/2 tablespoons of the fajitas seasoning mix and cook for 3 to 4 minutes, or to a desired doneness.
Combine. Return the previously prepared vegetables to the skillet and continue to cook for about 1 to 2 minutes, or until everything is heated through.
Finish and serve. Spoon the steak and veggies over warm tortillas and serve the steak fajitas topped with cheese, sour cream, and guacamole.
Notes
To make ahead, slice up the peppers, onions, and steak strips the day before, store them in separate containers or bags, and keep them refrigerated until the following day.
To store fajitas, transfer them to airtight containers and keep them in the fridge for up to 4 days or in the freezer for up to 2 months. Defrost in the fridge before reheating.
