Instructions
Prep. Peel the cooked eggs and cut them in half lengthwise.
Make the egg mixture. Gently scoop out the yolks and transfer them to a mixing bowl; mash with a fork. Stir in the sour cream, crumbled bacon, olives, chives, and Cajun seasoning; stir until well combined.
Fill the eggs. Spoon or pipe the yolk mixture into the egg whites. Garnish with cheese and bacon and serve.
Or make ahead and refrigerate. Once you've filled the eggs, keep them in the fridge until ready to serve. Take them out of the fridge and let them stand on the counter for 10 minutes. Garnish with cheese and bacon, and serve.
