Pineapple Mimosas are an easy-to-make cocktail with pineapple juice, coconut milk, and sparkling wine. They bring tropical vibes straight to your table!
Chill your drinking glasses. If time permits, chill 6 champagne flutes or glasses in the freezer for 10 minutes.
Combine the juice and milk. In a mixing bowl, whisk together the pineapple juice and coconut milk until thoroughly incorporated.
Make the mimosa. Evenly divide the pineapple juice mixture between the six chilled glasses. Pour the prosecco into each glass. Top with whipped cream and add a pineapple wedge, and serve the pineapple mimosas immediately.
