These festive peppermint Oreo truffles are simple, no-bake cookie balls made with Oreos, cream cheese, raspberry chocolate, and plenty of crushed peppermints.
Prep. Line two cookie sheets with wax paper and set aside.
Combine. In a large mixing bowl, combine the cream cheese, cookie crumbs, and peppermint extract; mix with a spoon until well blended. Taste and add more peppermint if you like.
Shape and freeze. Shape the cookie-dough into 1-inch balls and place them on the lined cookie sheets. Freeze for 10 to 15 minutes, or until firm.
Add the chocolate and set. Dip the cookie balls in the melted chocolate. Then, place each cookie ball in a single layer on the cookie sheets. Sprinkle with crushed candy. Refrigerate for 1 hour, or until firm, before serving. Keep refrigerated.
Notes
To easily coat the truffles with the melted chocolate, add the cookie balls in batches to the bowl of melted chocolate. Use 2 forks to roll the Oreo balls in chocolate until evenly coated. Remove them with forks, letting excess chocolate drip back into the bowl. Place the truffles in the prepared pan; let stand until the chocolate coating is firm.
